    I've had a lazy dinner of 2 x Graze portions...
    should really cancel it but I love the surprise.

    Mixed Bean Bake

    ·1 tablespoon olive oil
    ·1 onion, chopped
    ·1 clove garlic, crushed
    ·1 leek, chopped
    ·1 pepper (any colour), chopped
    ·1 large carrot, chopped
    ·2 tins tomatoes
    ·3 tins beans (kidney beans, butter beans, cannellini beans, pinto beans, haricot beans)
    ·Mixed herbs and black pepper (optional)
    Heat a tablespoon of olive oil in a large saucepan, then add the onion, garlic, leek and carrots and fry until soft. Add the tinned tomatoes, pepper and beans. If you like you can put some mixed herbs and pepper in too.

    Cover and simmer for about 30 minutes.

    Vegetarian Lentil Comfort Soup

    SERVES 6

    3 tablespoons olive oil
    2 cups/300g chopped onions
    1 cup/150g chopped celery
    1 cup/150g chopped carrot
    2-5 chopped garlic cloves
    4 cups/1 litre vegetable stock
    1 1/4 cups lentils/250g, rinsed drained after soaking overnight
    2 tins tinned tomatoes
    1 tsp oregano, sage, basil, thyme
    salt and pepper to taste
    1.Heat oil in large saucepan over med heat, add onions, celery, carrots, and garlic and saute' till vegetables begin to brown. About 15 minutes.
    2.Add broth and lentils and tomatoes with juice and let simmer until lentils are cooked and tender, about 45 minutes. Longer cooking does not really make a difference.
    3. Season with salt and pepper if desired and serve.

    These are really good recipes both freeze really well too. Oops, not really in keeping with this thread then!

    I love the sound of that soup, thankyou.

    Today I have used up some cooked chicken portions and some garlic bread, served with coleslaw.
    I am going to pull out a gammon joint for tomorrow to have with egg and chips.

    MR F and I weighed ourselves today - he now weighs 13 stone 7lbs - exactly half the man he was. :j I am so proud of him. :) I had lost 2 lbs - I want to lose a bit more - would like to be under 10 stone.
    I had a slice of HM syrup cake with a cup of tea this afternoon - yes I know just after talking about losing weight. Our change of lifestyle means we can have treats and still maintain/lose weight. It is all about balance. No processed meals/take aways or alcohol - lots of calories there.
    Dinner tonight - I costed it - this plate of food - which was yummy - cost - 64p. That includes extra roast potatoes that will go in the fridge for lunches.

    Stir fry tomorrow for dinner - a cooked sausage coming out of freezer.

  • Just been doing my month-end sums...
    Jan food spend £77.88
    but that includes ingredients for 17 HM meals cooked and now in the freezer (started off the month with an empty freezer compartment, now it's nearly full:)).

    Made a batch of veg chillie tonight, enough for tea plus 4 portions to freeze; total cost around £3.35:wink:.

    Feb targets are 14 NSDs in the month, and I'm going to see how many days in the month I can go without buying any food at all (except maybe some fresh fruit):D

    Hello all - had never really noticed this thread before although am regularly on MSE. Been lurking for last few days but thought I would post and say hello. Some great discussions and hints, tips, recipes on here. I can join you all for the veggie week as I am vegetarian - lol. An easy introduction!

    Anyway - <waves from Hampshire> nice to "meet" you all and hope I will be able to contribute some useful things.

    Lip_Stick - spotted !!!!!! - i used to love it as a child - but its the name can't bring myself to eat it now...same as cheesey wotsit crisps, my lovely nan, used to call your privates "wotsit"...just the thought makes me cringe!!!
