Breakfast Tart
A twist on the classic bacon and eggs, this tart has none of the last-minute timing issues you might have when cooking a full English for a hungry gathering. And it would be a great way to start off the Veggie Week Challenge:)
Serves 4
- 1 x 500g / 1lb 2oz block ready-to-roll puff pastry
- 4 large free-range eggs, plus 1 extra lightly beaten for glazing
- 8 rashers of veggie bacon
- 75g / 21/2oz / 1/3 cup crème fraîche
- 50g / 13/4oz Gruyère cheese, grated
- a few fresh chives, snipped, to decorate
- sea salt and ground black pepper
Preheat the oven to 220°C / 425°F / Gas Mark 7.
Lightly grease a baking tray.
On a lightly floured surface, roll out the puff pastry to 1/2cm / 1/4in thick and cut into a 30cm x 20cm / 12in x 8in rectangle. Place the pastry on the prepared baking tray. Using a paring knife, score a border 1cm / 1/2in from the edge of the pastry. Using a fork, pr1ck the centre of the pastry. Brush the border with the beaten egg and refrigerate for 15 minutes.
Cook the bacon according to the packet instructions. Set aside.
In a small bowl, stir together the crème fraîche and cheese, and season with salt and pepper. Spread the crème fraîche mixture on to the pastry, keeping the border clean. Lay the bacon on top, slightly overlapping the slices.
Bake the tart for 15 minutes, rotating the baking tray halfway through baking.
Remove the baking tray from the oven and place it on a level heatproof surface. Using a fork, pr1ck any large air pockets in the pastry. Crack the eggs on to the tart, spacing them 5cm / 2in apart. Return to the oven and bake until the egg whites are set and the yolks still soft, about 7–10 minutes.
Transfer the tart to a platter, decorate with the chives, and serve immediately.

I found this recipe in an old book so thought I would share it. You could do a non-meat version with veggie bacon (which cooks fine in the oven, even if that method isn't mentioned on the cooking instructions).
The Venerable Yorkshire Buck
Spread ½-inch slices of bread with mustard, and brown in hot oven. Then moisten each slice with ½ glass of ale, lay on top a slice of cheese ¼-inch thick, and 2 slices of bacon on top of that. Put back in oven, cook till cheese is melted and the bacon crisp, and serve piping hot, with tankards of cold ale.

Ploughman’s Melt
Toast a slice of bread. Let it rest for a few moments so the steam can escape. Spread a little grated Cheddar on top. Slice some red onion, eating apple and celery thinly. Lay on top of the cheese and pile more cheese on top. Grill until golden and bubbling.

A greaaat way to save money! I know I have stuff in my freezer too but most the time I feel like something different and because of this I end up buying something I feel like. So yes I accept this challenge .... I too are looking forward to see what's lurching at the back of my cupboard0

Afternoon all.
Spent £3.89 of next weeks veg budget on a 1kg bag of frozen sweetcorn, 6 free range eggs and a bag of cheesy tortillas, so that's the first day done, need onions tomorrow from lidl.
In all seriousness lipstick I've never had spotted !!!!!!, It's the name lol what's it like?
Had to take out 2 pints of milk out the freezer to fit corn in, that milk is great for mixing with nesquick which was also free.Lose 28lb 3/28lb

I know, not sure if the Council Tax will get the money off me, I have nothing to give lol. Not really fair all Councils will be different charges either, but then I've read single people and home owners may be even harder hit on U/credit. How will they win if they take a skint person to court?! Seriously I may as well get my cardboard box ready! my mum came over with some food today, my fridge was empty and had another job rejection in the post.
I think my pets have been poisoned by something, I'm not sure what though - it's hit all 3 as the other 2 are seriously ill now following the first one the other week, vets treatment now up to £400 ish and I don't know which way it will go, it depends if the meds work..
Food out the window today, my mum supplied lunch.
Dinner will more than likely be toast as I can't be arsed to cook!0 -
Had the last of the HM fruit cake for breakfast with custard.
Elevenses - found a small kit kat - so that was nice with a cup of tea.
Lunch was beans on HM bread toasted and a satsuma.
Dinner tonight - HM mince pie with roast potatoes, roast parsnip, savoy cabbage, carrots and gravy.

My previous efforts to use up what was in the freezer was an epic fail......;)
I actually bought an extra full size upright freezer and just moved my stash around instead :rotfl:
So now I have 2 completely full freezers instead of just one.....oops
Yesterday I made ham and leek philly cannelloni which used up the last of a YS ham I had in the freezer from Christmas, but it yielded 2 portions for the freezer!
So one step forward, 2 steps back!!
Today I did a one-pot chicken, mushroom and rice dish.
That has used up 2 chicken breasts, some onion, the last of a packet of petis pois from the freezer and 1/2 pack of mushrooms from the fridge.
But has left me with another couple of portions for the freezer and no way of fitting it in :mad:
Will I ever see an empty freezer drawer?????

Meant to read though all the backlog, but haven't as yet, i'll wait until I'm in bed and having one of my - can't go to sleep hours.
Breakfast:- branflakes and dried fruit - nice change from fresh fruit
Lunch was on the hoof:- cup a soup whilst sitting at the computer trying to get things finished
Tea:- chicken for my OH, I rather fancy beans on toast, followed by fruit.
Haven't had my pistachios yet today so maybe I'll just have those.
Feel quite lazy and tired at the moment, it's so cold, but the temp in the house says 23C in the hall. I'll go and put another layer of clothing on.0
