    Lunches today I have a WW quiche from the freezer, OH has sarnies with some deep filled sausage rolls out the freezer.

    I have lifted out a lamb joint for dinner which we will have with potatoes, stuffing, roast veg & yorkshire puds. OH will want a pudding too, so will do something that will go well with custard out the cupboard.

    Will also do some baking this evening when i get in, cookies and a tea loaf or sommat.

    Edit - also had some toast with bread out of the freezer for breakie!

    Feel shattered, had an awful night's sleep despite ds staying at mums, and me thinking I'd get a lie in this morn. Anyhooo

    Started putting my meals on the planner but can see me crossing them out umpteen times. Need to shop for veggies today. Will avoid Asda.

    A not so healthy meal of spam fritters, chips and beans for tea tonight.
    Tomorrow it's HM chilli, savoury mince for ds.
    Wednesday - pork chop with not sure just for me.
    Thursday - risotto
    Friday - chicken goujons

    And that's as far as I've got.
    There's a storm coming, Mr Johnson. You and your friends better batten down the hatches, because when it hits, you're all gonna wonder how you ever thought you could live so large and leave so little for the rest of us.
  • Still not had my fee cheque so eating out of stores is an absolute necessity this week!

    Breakfast was toast, cheese and tomatoes, lunch is packed lunch for kids and defrosted hm chicken noodle soup for me and evening meals are cauliflower cheese bake (l/o from last night) for me, chicken stir fry for elder daughter and Birds Eye crispy chicken, chips and peas and sweetcorn for younger daughter.

    I have some mashed potato left over from last night - only a little bit but I thought I might try and make some salmon fish cakes, but I haven't made them before. Anyone know how to do them? Do I need to add onions, herbs etc? I only have one tin of salmon in the cupboard and don't want to waste it!

    Salmon fishcakes sounds nice Jane.
    It's up to you if you want to add herbs (dill etc) or a tad of mustard, or just keep it simple. I wouldn't personally add onion and would just keep it simple with mash and salmon (good ratio of salmon to potato). When I make fishcakes with cod/haddock etc, I crush the potatoes rather than mash and leave the fish flakes large.
    I don't even use egg and breadcrumbs now, just lightly dust in flour and gently fry.
    Please update and give a review, never used tinned salmon for fishcakes.

    Need milk later and got a good few gaps now in the freezer, so hoping Sainsbury's have some great late bargains.

    Had toasted cheese muffins for breakfast and took out a 10p pack of pate and toasted on a nan bread for lunchtime snack (some pate left for pate on toast for tomorrows breakfast). Lamb casserole for later.
    Pasta meal and a stir fry with Lidl sliced chicken breast is on the agenda this week. Probably a free pizza with wedgers and salad (Aldi have cheap stuff on this week at 39p and worth a look).

    FishCakes:

    • 300 gms potatoes
    • 100 gms salmon fillet, skin on and no scales on the skin, all bones removed (or tinned salmon)
    • A small handful of fresh parsley
    • 1 egg
    • 1 lemon
    • Olive oil
    • 1 tablespoon plain flour (extra for dusting)

    To prepare your fishcakes
    Bring a large pot of salted water to the boil. Peel your potatoes, chop them into even sized chunks (or use the left over potatoes from your baked potatoes – scoop out the potato and discard the skin), add the potatoes to the boiling water and bring back to the boil. Rub the salmon fillet all over with a little olive oil and a pinch of salt and pepper. When your potatoes have half way cooked, place the salmon into a colander, then cover this with foil, and place the colander over the pot of boiling potatoes. Turn the heat down and cook for 8-10 minutes, until the salmon and potatoes are both cooked. Remove the fish from the colander and put to one side. Drain the potatoes in the same colander, then return them to the pot and let them steam dry for a minute. Pick the parsley leaves and finely chop them, discarding the stalks. Mash the potatoes, spreading the mash round the sides of the pan to help it cool down quickly. Remove any skin from the salmon. When the potatoes are cooled, put it into a bowl and flake the fish into it with 1 tablespoon of flour. Add the egg and chopped parsley with a really good pinch of salt and pepper. Finely grate over the lemon zest, then mash and mix it up really well.

    To Make Your Fishcakes
    Dust a plate with a little of the extra flour. Divide your fish cakes into 4, lightly shape and pat into circles about 2cm thick, dusting them with flour as you go. Put them onto a clean plate also dusted with a little flour. – If you are going to freeze them at this point, wrap them in clingfilm and put them into the freezer. Otherwise simply pop them into the fridge for an hour before cooking – this will allow them to firm up slightly.

    To Cook Your Fishcakes
    Put a large fry pan on a medium heat and add a couple of lugs of olive oil. When the oil is nice and hot, add your fishcakes and cook for about 3 – 4 minutes on each side or until crisp and golden – you may need to cook them in two batches. Serve straight away, with lemon halves for squeezing over, serve with lovely vege or a cool crisp salad. These fish cakes also go really is you use tuna instead of the salmon.

    Hope this helps! This is the recipe i use and its lovely!

    not too sure about tescos hun, as tescos is over an hour away for me ....
    although ive noticed in all shops things seem to be reduced more on a sunday rather than the weekdays... its probably because of the early shutting time

    and bank holidays!! the reduced sections on bank holidays or the day before are fantastic! :) i had amazing stuff at easter time, had huge joints of lamb for 1 or 2 quid each

    cant wait til next easter, just for the reduced section :p

    todays lunch is yesterdays reduced section sarnies :) chicken and bacon for ds(along with the reduced hazlenut yogurt) and cheeseploughmans for me (with all the salad taken out. just cheese and pickle then) :)

    not too sure what ill do for supper tonight? maybe just something light, more reduced section sarnies and a scone?? :D

    i would like to defrost my freezer before xmas but i can't see it happening tbh not so much defrost it but clean all the random peas and prawns from the bottom of it lol

    still using stuff up nicely toast for breastfast with oranges and rasins, i had a yummy breakfast hash with a few fired spuds, some beans an onions and a egg it was yummy i might make more tomorrow :) (altho not very heathy) made ds3 some pasta but he said it was yuck and when i smelt it it smelt off turns out my tom puree is off i usually keep it for ages with no issues so not sure wat happened this time but he wouldn't eat it or anything else except and apple, dinner is sheperds pie :)

    i need 2 buy soem bread lidl have 2 loaves for £1 so i might get them for the weekend i'm gonna make do with the breadmaker and part baked rolls for the rest of the week

    Hi Kitty, i havent tried it with Tuna, but have tried it with tinned salmon and tinned mackerel and both of them turneed out fine, so i should imagine that tuna would be fine too.

    I forgot to have lunch today, as i was busy working (i am a student and work from home on Mon and Fri) but dinner is big salad. I was going ot have it with chicken drumsticks, but i havent taken them out of the freezer in time, so i will have them with tomorrows dinner (veggie pasta bake).

    Mymerrywidow- do you need to defrost your freezer by any chance??:D
