  • Went out for a walk in the snow earlier today, well wrapped up; I even dug out the thermal undies from the bottom drawer, blue so they make me look like a Smurf gone to seed :rotfl:

    Went to the Post Office to buy some US$ but I wanted it in $1 dollar bills, they said they didn't enough in stock but could order them for me (which I'd have to pay for in advance) but there was no guarantee when they would turn up, or (get this) if they would turn up...so they were expecting me to pay for something I may not even get:mad: The Post Office man was very nice and apologetic about it, though.

    Also checked out the herbs and spice prices, and they were much cheaper than buying online, but resisted the temptation to buy them there and then as I wanted today to be another NSD:A

    Made a batch of Tuscan Bean Stew for my new slow cooker (thanks Santa :xmassmile) which should be ready to eat in about an hour, but there was loads left over so I blitzed it with the hand blender to freeze as soup. So I got two servings of soup, and I reckon three helpings of stew, from some store cupboard leftovers and some veg - total cost £3.55:T

    Hi everyone!

    Feeling a little low today as trying to arrange a party for DS2 birthday only to find out one if his friend's little sister is having a party the same day and has invited most of my son's friends but not my son. So not only did he not get invited but there will be noone at his party. Looks like I am going to need a rethink. :(

    Dug out four tapas dishes and a small garlic cheese bread for tonight and also did the boys a batch of bbq chicken drumsticks with chips at thier request. The chicken is yummy and not taking up freezer space now :).

    NSD today but there is nothing we need. Spent a little while digging through freezers and now at least I know what I have in the inside one if not the giant one! I know that I have food for ages though.

    Gong for a walking the snow in a minute - probably on my own though at this rate as the little one is driving me nuts. Was intending to take them all with me. grrrrr.
    3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

    Thanks all for my welcome :D Hope everyone has been OK today – was hoping for a day inside but forgot I’d arranged to meet a friend this afternoon and I’ve got a birthday get together tomorrow! Typical to have a busy weekend when it’s weather like this lol

    Did manage to make some bread and shortbread (may have eaten most of that since…shh! Kirri I’m going with your theory of cold = more hungry than usual as an excuse!) this morning, and used a portion of mac and cheese as intended! Good luck to those with more snow than us in London – I was waddling along my street like a penguin to meet my friend today!

    Kirri I’m in Streatham, stone’s throw from the Lidl! I can sometimes be found walking up Brixton Hill as well! Unfortunately no allotment – but now there’s 2 of us maybe we could stage an ambush?! PS hope your grandma is OK

    Eighth Anniversary 500 Posts Combo Breaker I've been Money Tipped!
    Evening all, went to lidls and got oh to pay for the shopping lol £41 for the weeks shopping not bad considering what I was spending at one stage you would be shocked and lynsey would have a heart attack lol, thanks to you all you have taught me well and make me think.

    Ms_night_Ryder you made me laugh about kirri not letting you come to her allotment, wait until late summer and I'm sure she'll invite you when there's something for you to maybe have. I used to have a veggie plot at my old house and it was great, the kids loved the stuff and enjoyed watching it grow but weren't keen on the weeding. We grow tattles,lettuce,broccoli,onions,leeks, all the simple stuff.

    Katscorner I feel for you really, I have been in a similar situation before but not had a party organised but my son has been excluded from parties I blame the parents and it really hurts, especially when the other kids go on about it and say there wasn't room for you bullsh#t, and they hand out the invites at school. Take him and your other kids away to do something they've not done in a while. I am sure he will have a great day anyway xx.

    Well food today was brekkie they had scrambled eggs, lunch Irish stew and dinner theyjust snacked. I've had a cheese Roll lidls roll and bag of crisps. If I'm honest and feel private here I've not been feeling well recently and feeling really tired but yesterday I've had some embarrassing symptoms and will have to go to the doctor which I am embarassed about but I know I have to go. I feel I can't tell my oh as he's so concerned about his mum just now I don't want to tell him, but I will need to tell him eventually. He is on the phone to his mum a lot just now, well months really and I don't want to add to his stress but I know somethings wrong now. Think I will go to the doctors and say nothing for just now. Think I am venting a bit just now sorry.

    Well weather we've had snow but not an awful lot, as kids said we want more snow, they were actually chanting that lol.

    thanks for your kind words everyone. Ds2 was so upset about his friends not coming. not sure what to do yet.

    Traditional Tuscan Bean Stew

    lge can cannellini beans
    lge can borlotti beans
    lge can chopped tomatoes
    1.5 pints veg stock (homemade or stock cube)
    2 tbsp green pesto
    1 tsbp olive oil
    1 large onion, diced small
    1 courgette, diced very small
    2 leeks, thinly sliced
    3 celery sticks, thinly sliced
    1 carrot, diced small
    1/2 a dozen baby spinach leaves
    2 garlic cloves, finely chopped
    1/2 tbsp basil (dried, or fresh chopped)
    salt and pepper, to season
    splash of Worcestershire sauce (optional)
    splash of chilli sauce (optional, if you prefer it a little spicier)

    In a large pan, heat the oil and gently fry the garlic, then add the onion, leeks, celery and carrots, and cook on a medium heat, until just starting to brown. Add the beans, tomatoes and stock, seasoning to taste (plus the Worcestershire sauce and chilli sauce, if preferred), and bring just to the boil.
    Then either:
    a) Slow Cooker: transfer to a slow cooker and cook on Low for 7-8 hours; then stir in the courgette and spinach, and cook for a further 45mins
    b) Hob: reduce to a low heat, cover and cook for around 45mins-1hr until the veg is very tender, stirring occasionally; then stir in the courgette and spinach, and cook for another 20-30mins
    (then same for both cooking methods) Turn off the heat, and stir in the pesto, just before serving in large bowls with some nice crusty, thick-sliced generously-buttered toasted bread

    (I like to add a dash of Worcestershire sauce and chilli sauce, but this might not be to everyone's taste; you can vary the amount of veg stock depending on how thick or runny you like it - the photo shows it made according to the standard recipe...well, it's from the batch I made today actually:))

    CM05 - Hi and welcome!

    Jak - Apple butter is just very smooth and very reduced stewed apple - at least that's what I think it is!! I made mine in the slow cooker on low overnight - just loads of chopped apples, a bit of sugar and about a cup of water. I left the peel on - as they were red apples it went a lovely rosy dark colour. You are meant to seive it when its done but I didn't and it was still lovely. You can have it as a pancake topping or use as apple sauce with pork or anything really.

    Zafiro - I would deffo make mango chutney - or you could make a salsa with onions, chilli and the like.

    Lynsey - I felt sorry for your OH with the blue cheese sauce. I don't make blue cheese sauce with cream at all. I just make up some white sauce with cornflour and milk (no fat) and then add seasoning and some crumbled up blue cheese. It's not like the "real" thing but has less than half the calories and fat.

    Katskorner - I feel soooo sorry for your DS about the party. When I was little it was always a big fear of mine that no-one would come if I had a party, and both my kids are the same. There have been several occasions when mine haven't been asked to parties and it really hurts.

    Kirri - hope your Grandma is okay.

    Justtrying - do go to the GP - is there a lady doctor you could see?

    Had the rest of yesterday's mild pork chilli for lunch and it was even nicer today!

    Tea was pizza but I didn't fancy it so just had two pieces of toast. I find that if I have a substantial lunch I am never really hungry for tea.

    I made some all bran tea bread today and threw some brown spotty bananas in it and the rest of my apple butter. I put them in the oven and then fell asleep and they got burned on top. I had a slice though and it still tastes nice - just wouldn't give it to guests!!

    I was going to do salmon tonight so got it out of the freezer yesterday, but as we didn't eat it I will cook it for tomorrow. I don't really like salmon but I will do it with herbs and lemon juice and I have a packet of hollondaise sauce which might make it a bit more edible. I bought it because it was half price on Ocado and DD loves it! We'll probably have it with savoy cabbage and new potatoes.

    I did a re-write of my big work report today and was supposed to get it over to the Chief Executive this afternoon. I did the e-mail and attached the report and forgot about it - then when I just logged on now I saw that I had forgotten to hit send and it was still there!! I sent it and apologised but hope she isn't too mad. That's the thing with being self employed - they think you can work weekends or late nights because you work from home!
