I'm eating out of the freezer and cupboards challenge

Good morning,
Managed to use up a bread recipe that was made in October this year. This contained ingredients originally from the freezer probably obtained in summer. On one hand resourceful but it is also suprising the length of time.0 -
Not done very well this weekend as we've not really eaten many meals, and I want to go out for dinner later as i want a roast but don't want to cook/clean up
not been shopping, may nip to lidl shortly. But we've enough to live off for the week ahead if i don't make it. Might go to Mr M's too in search of mulled wine bits and pieces.Annual Grocery Budget £364.00/£1500

I would take out 1/2 lb mince & make 2 meals with it, pasta Bolognese today & a shepherds pie for tomorrow. I usually cook them both at the same time in separate pans, then put the meat for tomorrow in a dish & make mash tomorrow with potatoes & swede.0

something i've been doing with excess eggs is to line my muffin tin with my silicone muffin liners, then crack one egg in each one, i set that in the freezer til they are solid then pop them out of the silicon liners and into a bag, i know that each disc is one egg
i had tried the ice cube thing but it took two cubes per egg and i had to make sure each bag had the same number of yolks as non yolk cubes plus it was a pain getting them out of the tray, this new method works great!0 -
I decided to make a home made takeaway tonight and it was great! I boiled some basmati rice and then made 3 dishes, all using freezer stuff. I diced two chicken thighs and stir fried them with a bit of freezer stir fry veg and some Sharwoods plum sauce and a dash of soy, I sliced a very small piece of sirloin steak which I got reduced ages ago and stir fried it with onions and a bit of honey and mustard and then I had one small solitary pork steak so I sliced that and stir fried it with onions and BBQ sauce. Kids thought it was a great novelty!
I do need to go and get shopping in the next couple of days as I am low on fresh stuff, but I am determined not to buy loads and loads of "Christmassy" foods as we never eat them all and they are so expensive.
I am still in love with my breadmaker and am only up at this hour as I am waiting for a loaf to finish so it will be cold enough to slice for packed lunches in the morning.Jane
