I'm eating out of the freezer and cupboards challenge

Well my planning is well and truly down the pan - we went for Pizza Hut last night after the dentist - I'm really not in the MSE way at the moment - sorry guys
DS1 wants a fry up tonight so that'll take up some hash browns and sausages from the freezer and I think tomorrow night it will have to be Chinese - DS1 doesn't leave school til almost 5.45 and I can't begin to think about cooking something when we get in after that!
I promise I'll do better next week after we're back from our weekend away - I'm having a very stressful time at work right now and once I've got a particular meeting out of the way tomorrow afternoon I should start and feel betterAnywhere is within walking distance - if you have the time!!0 -
Nancy - we all fall off the wagon once in a while! I fell off for nearly a month, but am back on it now (although, more out of nessesity than anything else!)
Still waiting for the fish to defrost, lifted out prawns and will create my fish pie later this afternoon.
Scotch pie for brunch, won't eat breakfast i don't think. Lots of little jobs to do.
Hoping for a NSD today. Am putting a cheque into the bank which i hope to put straight into my savings account.Annual Grocery Budget £364.00/£1500

Thanks for the encouragement bramble...the thing is that this is so alien to me as I'm always the organised one - the boys know to look on the corkboard and see what's for dinner when they get home - they even make suggestions if something comes up like an after school activity and suggest where we can swap things around :rotfl:
I guess I just need to get tomorrow's meeting out of the way and then I can move forwards properlyAnywhere is within walking distance - if you have the time!!0 -
Today DH is home from working poorly with cold so I'm pulling out a piece of rump steak that I got reduced some time back and was waiting for just this occasion (as not enough for everyone.
) Can't wait!
Rest will be having Sausage rolls, mash and beans. Bitty samey but needs must and they love anything that involves sausages. Has to be something quick as having friend round tonight and want tea out of the way.
Am so so cold today. Freezing, so am going to have a day of baking bread, biscuits and anything else I can find to keep the house warm inbetween running out to do errands.
Hope you're all keeping warm.AUGUST GROCERY CHALLENGE £115.93/ £250

Bought some bread flour yesterday to use in my new Panasonic breadmaker - made 2 loaves yesterday - the wholemeal on is fab but the white one is a bit full of air holes - will have to perservere and see if I can improve it. It certainly fills you up though!!! Ihave had two pieces of toast this morning and I feel like I have eaten a Christmas dinner! 2 slices of normal sliced bread would normally not fill me up that much at all!
Last night DD2 brought a friend home for tea unexpectedly so I just threw a load of jacket potatoes in the oven and made a selection of toppings to put on the table for everyone to help themselves - I did a tin of beans, a couple of rashers of chopped up grilled bacon, a few chopped up sausages, grated cheese with onion and tuna and sweetcorn - I also made a salad and it went down really well - even fussy DD1 said it was a lovely tea! It hink it was the novelty of choosing the different toppings and mixing and matching - all storecupboard/fridge stock items too so that was good.
Tonight will be the spaghetti and meatballs I was going to do yesterday - kids took l/o tuna on sandwiches for packed lunch and I don't think I will have any lunch as I feel too full after that toast!!
It is freezing and blowing a gale here today!!Jane

RS - the air holes are something to do with the kneading i think?! It's in my book but i shall look at it shortly. I've made 2 loaves of bread today too. and my fish pie smells yummy, going to put a little cheese over the top before it goes in the oven later.
I thought the fish had loads of bones in it which was why we've not used it yet, but these bits where fine, so will do some more next week in a sauce with potatoes i think.
The freezer is looking emptier every day! Looking forward to starting the new year with cupboards that only have things in that we use!
Edit - RS - The holes are from over kneading according to my book, impossible if kneading by hand but common when using BMs or Machines.Annual Grocery Budget £364.00/£1500

Went to waitrose to get some milk and picked up 2 x sarnie fillers that were reduced. Cheating i know, but OH likes them and for the price it was less than a tin of tuna or cheese/mayo.Annual Grocery Budget £364.00/£1500

I really must try and utilize our freezer more. All that's in it at the moment is bread and my homemade soups. I really want to get stocking up on meat when I find it cheap. (Not that you find it that cheap these days!) Anybody got any pointers on getting started with freezing stuff?
make up a large batch of stew/chilli/curry etc, then freeze in individual portions. label what they are before they go in the freezer tho!! i do this for us and also for my dad who lives in the next road. i got him a freezer and when i have a day off, make about a months worth of meals for him, freeze in individual pyrex pots and pop them into his freezer. he just takes a meal out each evening to defrost in the fridge overnight ready to warm up the next day. we do the same, but also use the microwave to defrost if a son/oh needs a meal unexpectedly.
another thing i do is make up parcels of frozen fish and veg to use in the same way (use greaseproof rather than foil if you are going to put in microwave). just add a bit of left over warmed up potato or such like to have a quick, healthy meal.
i also freeze pots of fruit like blueberries - i don't faff around with freezing them separately on a baking tray, just shove the whole pot in - i've never had problems separating them when frozen. then you can use them to make smoothies.0 -

be careful if you're going to eat them too - they can be very high in calories - i was shocked when i started reading the labels! am also aiming to lose weight by jan, but hectic lifestyle and endless christmas goodies on offer to eat everywhere aren't helping that goal!:rotfl:0
