Chocolate, cherry and hidden grain fridge bars
Try this delicious snack from Ghillie James’s new cookbook, Amazing Grains.
Ingredients (makes 16-20)
75g quinoa
250g unsalted butter
3 tablespoons cocoa powder
5 tablespoons golden syrup
100g dark chocolate, roughly broken up
1 x 400g pack digestive biscuits
150g fresh cherries, pitted and chopped
75g walnuts, roughly chopped
1 tablespoon chia seeds, optional
For the topping:
150g dark chocolate
Method
Step 1: Line a 21 x 25cm tin with a depth of 5cm with greaseproof paper. First of all, cook the quinoa in boiling water for about 12 minutes, then drain thoroughly and cool. Put the butter, cocoa, syrup and chocolate in a pan and melt over a gentle heat. Half fill another pan with some boiling water and gently heat. Break the topping chocolate into a heatproof bowl and leave to melt slowly over the water.
Step 2: Meanwhile, break up the digestives into a large bowl and, using the end of a rolling pin, bash them up a bit more, so that they look roughly chopped. Stir in the quinoa, cherries, walnuts and chia seeds, if using.
Step 3: Pour over the butter-chocolate mixture, stir until combined and then spread out into the tin. Pour over the melted chocolate and chill for at least 4 hours until solid. Cut into 16–20 bars or squares and keep in the fridge.

Nothing out the freezer today..
Breakfast - (free) granola and yoghurt
Lunch - finished off spelt & rye biscuits I'd got on offer, with cheese
Dinner - red vegan pesto I got today with pasta and HG garlic/courgettes/borlotti beans
Had a fruit bag delivery today so will start munching on some of that later, seeing as I've run out of all cakes, chocolate and biscuits0 -

Quite like the sound of:
Lazy Courgette & Sundried Tomato Cornbread0 -
Even more stuff out of the freezer for me!
Yesterday, out - minced beef and chopped onion, made meatballs.
Today, out - Tandoori Salmon and prawns
On a roll!0 -
In to freezer - nothing.
Out of freezer - 2 Burgers + HM Carrot & Onion Quiche.
We had burgers + HM wedges + barbecue baked beans for dinner
The burgers were brought home by Mr F - not my favourite food but there are 3 more packs in the freezer. Too thrifty to throw them out.Decluttering Achieved - 2023 - 10,364 Decluttering - 2024 - 8,365 August - 0/45

Flo, thanks for the idea of the mini pies, Turkey, veg and gravy filling, they were delish! However I think I need to invest in some round pastry cutters, cutting into squares did not leave them pretty like your.
Have leftover turkey, will turn into a creamy pasta tomorrow.Lose 28lb 3/28lb
