  • I have a double chest freezer full to the brim, and now it's just me, I have so much food to get through. Trying my best to be frugal & not buy any frozen food for at least the next few months!

    Hi everyone,

I am also trying not to buy anything apart from ingredients for beverages. One "sticking point" for me regarding this challenge is sometimes creating completely new recipes in large quantity as opposed to using old freezer ones up. Consequently, they will end up in the freezer with only a marginal decrease in the storecupboard ingredients.

    Hi all,

Back from Scotland and focused on the challenge once more!

Not got much in but going to try and make it through the week without shopping!

Cereal bar and mug shot ( 3 for £1 in poundland) for lunch, dinner I think will be lasagne chips and salad. Something mince related anyway!

Can anyone think of anything I can use some burgers for instead of just burger and chips? Bit bored of that, but burgers are so cheap ATM I keep buying them!

bramble1 - Would burgers on a teacake with salad, ketchup, cheese or whatever be a change?

Hi Bramble - hope Scotland was good

What about breaking the burgers up and using them instead of meatballs in a tomato-y pasta sauce?

I might also use them broken up in mince to make a meatloaf. I've made meatloaf before with squidged up sausages in with the pork mince so can imagine squidged beef burgers with beef mince would kind of work....

  • Hi All - I have fallen off the wagon a bit of late as I have developed a worrying obsession with going to Tescos at about 9pm and stocking up with reduced stuff!!

Anyway back at it from today. Breakfast was just coffee as I wasn't at all hungry and this morning I made a huge pan of chicken soup from l/o chicken carcass, carrots, onions, celery and potato, plus some of my stash of Knorr chicken cubes (got a LOAD when they were 49p for 20 on Approved Foods), a bay leaf and pinch of herbs. Added a bit of l/o cream when it was cooked and it tasted wonderful Had a big bowl for lunch and younger daughter will have some when she gets in from school

Dinner tonight will be meatballs with pasta - don't know whether to do pasta or whether to make meatball subs with some baguettes. Will have a think.

I have some beetroot that I got reduced to 8p in TEsco the other night and it needs to be used up - I am thinkinng of making a chocolate beetroot cake - will go and search for a recipe!

Thanks for the suggestions, - OH hates meatballs, but i like them, so could do a meatball pasta, and portion it up for my lunches.

Meatloaf is a good idea - not something i have ever made, but will look online for recipes.

I could break them up, get some pitas, salad etc and make a kebab from them too!

    So far so good today.

I am going to my mums house as she is away for a while to see if there is anything good to stock up on :) so hopefully will have a NSD today.

Been sorta meal planning today, got plenty of ideas just need to tidy the kitchen and get organised.
