I'm eating out of the freezer and cupboards challenge

^ Hope they don't take as long! I wouldn't want to be without a toilet for more than a day!
My building work has ground to a halt whilst the 3 parties involved keep getting the paperwork wording wrong
Yesterday:
Breakfast/Lunch - egg on toast with mushrooms in garlic
Dinner - another stuffed pepper and salad - the rice was done with olive oil, garlic, vegan stock, mushroom, mint, parsley, pine nuts - lovely!
Today:
Breakfast/Lunch - egg on toast with mushrooms in garlic
Dinner - couscous tabbouleh with roasted peppers, sumac, baharat, and parsley with griddled courgettes, pine nuts, haloumi, cherry tomatoes and garlic and a salad with spicy leaves from the veg box plus rocket, chives and radish from the allotment with olive oil and salt dressing. My portion size was a bit bigger than planned but I did miss a meal today.
So nothing from the freezer but I needed to use the haloumi up.

evening all.
Bought some whoopsiea today, first in a while 4 muddy burgers 2.10 worchester and mature cheddar, had one grilled for lunch, with mixed leaves, coleslaw, tziaki, a slice of bread.
Dinner was the same, but had bits of marinated pork and a corn on thw cob, having tummy trouble so don't want to feel bloated.
Hope you're all well.Lose 28lb 3/28lb

So tired last night - hard day with 4 workmen here - so noisy and dusty.
We just had poached egg on toast.
Today Mr F was out on a course - included meal so only dinner for me. I had Chicken Curry - FF with Basmati rice. I made extra rice to keep in fridge.
Bathroom ripped out today!Decluttering Achieved - 2023 - 10,364 Decluttering - 2024 - 8,365 August - 0/45

Pizza sauce out of the freezer, to make HM pizza for lunch. And I think I've worked out a pizza dough recipe that works really well, and is easy to make (can make it in the food processor).
I left the dough to prove, while I walked to the Italian salumeria to get some proper parmesan (£3.80 for 100g but it's well worth it for the difference in taste to supermarket stuff - the deli owner travels to Italy every two weeks and brings back stuff for the shop, and it'll last me for ages).
Also got some fresh rosemary, for the pizza topping; I've got loads of rosemary left over, more than I'll use, so am going to try and freeze - has anyone frozen fresh rosemary?'It is better to remain silent and be thought a fool, than to open your mouth and remove all doubt.'

I have found that having a HUGE expense and not being able to shop focuses the mind on using what is already in the house!
Hubby was seriously ill with cancer so we invested in a small chest freezer and were very lucky to be given a brand new fridge freezer! We used to our advantage: special offer reduction, home cooked batches etc has worked seriously well.
The chest freezer has 12 crusty rolls in it, once gone I shall defrost and clean and then restock again by batch cooking and only buying reductions and special offers.
Great to see how inventive folk have been, have gleaned a few ideas here, thanksSaving 1 animal wont change the world - but it will change the world for that 1 animal

Batch cooking is definitely a path to follow, hope we all continue to provide some good ideas.:)'It is better to remain silent and be thought a fool, than to open your mouth and remove all doubt.'
