L: tuna and peppers on a small brown baguette (HEB + 2 syns for the mayo). Strawberry and banana smoothie (8?)chicken tikka curry with rice
S: lots more fruit to make up the 1/3 requirement!0 -

My courgette plants are growing like mad so I'm keen to hear any recipes, especially syn free ones. In Turkey, last week, I had courgette fritters (mucver) and asked for the recipe in the restaurant. They told me grated courgette, grated carrot, some herbs and seasoning and then bind with an egg. The on-line recipes look more complicated and have flour in but I'm going to give the above a go. It'd be lovely with yogurt and mint dip if it works.
Yesterday I substituted courgettes for celery in a Jamie Oliver roast pork recipe (pork shoulder roasted on a bed of veg). Today we're having stir fry and as Asda didn't have the usual mix that I buy (maybe in case anyone was poisoned by beansprouts??) then I'm going to be scratching round to make up the veg for that. So far it's going to be courgettes (!!!), cabbage, carrot, peppers (frozen), mushrooms, small tin of beansprouts and probably some asparagus and green beans (frozen).
My EE menu for today:
B: NAS squash, 2 boiled eggs, HEB toast, HEA milk in teas, satsuma
L: pork and tomato sandwichpork (again!!) stir fry with Batchelors golden rice and loads of veg
Snack: maybe an apple or bowl of berries if I'm hungry this evening0 -

The courgette & brocolli soup that I posted on the recipe thread the other day is GORGEOUS, consultant at our group gave me the recipe.....so easy but tastes heavenly
Afternoon Lovelies :A
Just got Back from LGI (for a routine follow up with the Neurosurgeon who did my Original Brain Op) and we called into the ENT Dressings dept after to let them have a look at my magic ear Op 'wound' as its been a bit troublesome over the weekend
Its a bit inflamed & weeping so they've cleaned & changed it and given me some Anti B's to start immediately - I go back on thursday for another dressing change and hopefully these tabs will have kicked in by then.
Food wise I've been a good Dizzy this weekendthis heat has helped as I've not felt much like stuffing my face.....except with fruit lol - and we got the BBQ out yesterday (despite the clouds) so I had a red day and lots of chicken & syn free HM burgers/kebabs with salad stuff.
I even had a couple of bottles of Sainsburys 1 syn low Alch lager with diet lemonade which was lovely and 'beery tasting' and felt a lot more than just 1 syn for a 500ml glass !!!
Right I'm off to do some more of Doctors orders.....rest & do nothing (I don't need telling twice, especially when there is a big pile of ironing I'm looking to avoid:rotfl:)

Thanks for pointing me to the soup recipe dizzy and I see another one on the recipe thread for courgette soup with a bit of bacon. I'll give them a try.

I think we can all see your post but not many of us except maybe consultant, know anything about being a consultant especially the costs involved. SorryIts not what you do but the way that you do it, thats what get results :T
