I love lamb mince,mix it with the onion and any herbs you have .Then have it with a tin of cooked chopped tomatoes and pasta .Very yummy with alot of black pepper and a touch of cheese on the top .Life is short, smile while you still have teeth0

Greek Pastichio ...improvise from this recipe!

The recipe shows a good picture, but the method is a bit confusing, don't mix it all up, pastichio is layered, just like a lasagne!
It slices up when cold and is actually nice in a packed lunch as well as served hot!

Also, china chilo, an Eliza Acton recipe that pre-dates Mrs Beeton.
For around 500g of lamb mince you want around 1 pint of fresh peas and two lettuces. Gently brown the lamb in ample butter, then add the peas and the finely shredded lettuce with just the water on the lettuce from washing and simmer gently for around two hours. Serve with rice
I suppose a bag of frozen peas would be okay, but I keep this recipe for the summer to keep it special. It isn't cheap if you have to buy the peas, but it is really, really lovely and a delicate flavour.
