    Hi Nomoneymummy,

My favourite thing with lamb mince is moussaka but it's a bit of a faff to make and I see you want something quick and easy. What about using it with the tinned tomatoes to make meatballs in a tomato sauce served with the pasta or shape it into lamb burgers and serve with the mash and peas?

  • Hi Pink X

Is it possible to make Meatballs without breadcrumbs? Usually use them for mine and can't seem to find a non-Breadcrumb recipe xx
    Thanks x

I usually add breadcrumbs but particularly with lamb mince they should be ok as it contains enough fat to help hold them together, or you could add a little flour to the mix to help bind them. Once you shape them, pop them into the fridge for a little while as that will help to stop them falling apart when you cook them.

  • I'm planning on having a go at lamb mince bolognese pasta bake today! I had it in a cafe and it was delicious, so hoping mine will turn out vaguely similar...

  • Have made the lamb mince bolognese pasta bake, I was pleased with it! This is the recipe:

    Ingredients
    500g lamb mince - £2.99 (2 for £5 in Tesc0)
    2 tins of chopped tomatoes - £1
1 mini tin of tomato puree (they sell them in Sa1nsbury's; I'd say it's about 2 tbsp) - 25p
    1 onion - about 20p
few cloves of garlic - about 15p
    various seasonings - ?p
    250g pasta (I used penne) - about 30p
Bag of grated cheddar - £1.60 (this cost the same as an equivalent block)

Gently fry chopped onion and garlic until translucent. Add the mince, salt, pepper and some mixed herbs. Brown the mince. Stir in the tomato puree, then add the chopped tomatoes. I like to add lots of odd things to my bolognese sauce and taste it as I go; today it was some gravy granules, some beef stock (cube), some chicken stock (powder) and a spoonful of sugar (this makes bolognese delicious! although it sounds weird). Sometimes I put balsamic vinegar and bay leaves in too. Leave to cook for a while (I only usually bother for about half an hour). Meanwhile, cook the pasta. Put all in an oven dish and pour the bag of cheese over the top (I love cheese, this is a lot; I think it could be reduced by half and still be nice). Cook in the oven at about 180C for 15-20 minutes, or until cheese is brown and bubbly (make sure it's all really hot).

    Makes 6 generous servings.

  • Did the meatballs, and as I was trying to form just were not feeling right, and all I had in was some allbran! So bashed the heck out of it and chucked it into the mix and they came out so so tasty (and better for us than breadcrumbs!!)

And winterfrost I always add sugar (1tsp) to tomato dishes as otherwise thay can be too tangy.... odd but much yummier with!!!

I love lamb mince, it's much nicer than beef.
