I made this recipe up but we like them a lot !
500g lamb mince
1 onion
tsp hot chilli powder (or to taste, we like it spicy)
tbsp cumin powder
good palmful of fresh mint
good palmful of fresh coriander
Brown the onion in a little oil, at the end heat through the spices. Allow to cool and add to the raw lamb, along with the fresh herbs and seasoning. shape into burgers and leave in the fridge for at least an hour.
If cooking them indoors I brown in a pan then finish them off on a drip tray in the oven so the fat can drain off but they taste amazing on the bbq.
We serve them on wholemeal rolls with Raita and a red onion and tomato salad and sweet potato chips on the side0 -

I've been trying to find more interesting things to do with mince and after a quick check I've actually got everything on the ingredients list (apart from the tinned plum toms, I've only got normal chopped, do you think it would matter?) so am going to give this a bash one night this week :T
You're welcome. I've only ever done it with minced beef and tinned new potatoes (half a big cheap tin and have the rest with something else).
Ready chopped tomatoes will be fine. I just specify the whole ones to make the point that they can be used in both ways, which could be useful if you're really watching the pennies. If I'm buying specially for a particular dish, I sometimes "cheat" and buy ready chopped ones. (Those cheap KTC ones in ASDA are very good.) At least I'm not as bad as Delia! The acquisition of wealth is no longer the driving force in my life.0 -

I need some inspiration. I have defrosted a 250g bag of lamb mince but haven't cooked with it before. Any suggestions for what to cook for tea - I am hoping for something a bit more exciting than shepherds pie (we had cottage pie last week!)
I know I'm too late to help for your tea, but for future reference, I make lamb pasties, which are really yummy. I made up the recipe myself, so can't give you precise quantities, but basically....
Chop an onion finely, sweat in a frying pan with your lamb mince (no need to add any fat). Dice a medium potato finely and add to the pan. Cook over a lowish heat, stirring now and then, until the potato is cooked. Add flavourings of your choice- I usually add a big dollop of mint jelly, salt and pepper, sometimes a teaspoon of mustard powder.
Make up some shortcrust pastry, roll out and cut circles around a saucer. Spoon in the filling (this is easier done when the filling is cold), seal, brush with milk and cook at about 180C until the pastry is cooked and browned.
