    It is my first wi as a target member tonight and I feel really nervous about it! Wish I hadnt eaten that malteaser bunny last night now!

    Dizzy hope you got on ok at hospital and that you will be in less pain too and fingers crossed for wi tonight.

    can anyone give me ideas for low syn puds? I have a terrible sweet tooth and always have to have something sweet after a meal, I'm bored of fruit and yogurts already!, just need some alternatives to satisy my sweet cravings (would normally be chocolate, biscuits, cake etc lol!!)

    Afternoon all, i wrote a huge post this morning and lost it:( didn't have time to re-write either, stupid mouse at work has a button that if you knock it it takes you back to a different webpage and i knock it every so a lot! grrrrr...

    Anyway - how are you all? Well done for SOW Papoosue, well done to all the other losers and good luck to the WI's tonight.

    Me and OH properly joined class again Tuesday so trying to be good as gold this week, however y'day i did have to make 3 dozen cupcakes for an order. I usually get OH to sample them cos i'm not really into cake:eek: and I won't send an order out without testing first (just incase) but didn't want to sabotage him so i tried the smallest bit with buttercream. i held it over the bin so that as soon as i'd took my bite i dropped it in there!! i've synned it so hopefully it should be ok.

    Having a red day today as I'm off to see Westlife later :jwith only half an hour for dinner, so i grabbed a stew out the freezer. At least being out of the house means i can't eat the cupboards!:rotfl:

    Well i'll stop the waffling.. and try and catch up with you all tomorrow and hear about more fantastic losses.. :wave:

    ohh meant to add, Milliemonster - do you like jelly?? I mix some jelly crystals up with 1/4pint of hot water then add a tub of natural yogurt (or fromage frais) to it.

    You can either set it in one dish or put it in small dishes and then let it set in the fridge. I have it on its own or if i'm feeling indulgent i squirt some cream on top and sprinkle with vermecelli (sp?) without the cream it would be negligible syns with it only a few.

    6 Eggs (free)
    14 level tablespoons of Splenda (free)
    2 oz Self Raising Flour (9 Syns)
    2 teaspoons of Baking Powder(1 Syn)
    Couple of drops of Vanilla Essence (free)
    2 Tablespoons of Nutella (8 Syns)


    Put the eggs, sweetner and vanilla essence into a bowl and whisk with electric whisker until the mixture trebles in size ….. about 10 minutes, should be light bubbly and golden.
    Then sift the flour and baking powder into the bowl and fold in with a metal spoon to the egg mixture.
    Split into 18 cake cases and put in the oven (middle shelf) on 180 – 200 for about 10 minutes until golden on top.
    Leave to cool and then melt two tablespoons of Nutella in the microwave for 30 – 45 seconds and then lightly spread the top of each cake with the Nutella. You should be able to cover all 18 with the 2 tablespoons.

    It works out to be 1 syn each - or 18 syns for all of them!!!

    Someone gave me this recipe, i don't know what it is like as i haven't had time to try them!

    Shop bought meringues are very low syn (or use following recipe which is syn-free). Filledwith fresh berries and a little squirty cream (whch is only ½ syn for 2 level tablespoons) they're yummy!

    MERINGUES – syn free & will keep in an airtight tin for a week!

    4 Egg Whites
    16 tbsp Splenda (allow 4 tbsp per Egg White)



    Preheat oven to 110C
    Line a baking sheet with non-stick baking paper.

    In a large clean, greasefree bowl, whisk egg whites into soft peaks.

    Whisk Splenda in a tablespoon at a time till stiff then fold in remaining with metal spoon. When whites become fluffy stop and lift up some mixture, it should stand up in stiff pointed peaks. Too much Splenda added at once will soften whites and prevent crispness etc. Beat mixture together well after each addition (but don't over-mix!)

    Drop spoonfuls, spaced apart, onto paper using a teaspoon for small or dessertspoon for large meringues!

    Bake for about 90 mins at a low temperature (or till dry and lift easily off paper). Slow gentle cooking ensures they are light and dry with no stickiness.

    Cool at room temperature.
    I let my mind wander and it never came back!

    I am so fed up of not being able to follow the plan this week with having a wisdom tooth out! Be glad to get back to normal as so missing my salads and fruit.

    Food at the mo is mashed potato, spaghetti and sauce and lots of yoghurt and tofu mousse! Can't face soup as hate cold soup.

    Should be back on plan next week I hope once its not painful to eat!!!

    Ive nto been to WI too tired to venture out again after work and wont have lost with eating less food but will be back on track soon:)

    I was going to suggest rice pudding, a couple at our class eat gallons of it and they never fail to lose weight, it's SW rice pudding obviously and cos I don't like rice pudding I don't personally have a recipe but you could make one up! Theirs definitely involves fat free fromage frais. And re the meringue, another idea is to use some summer fruits or apple, gently stew with sweetener, remember cooked fruit has syns but not many, then top with your meringue mix and bake it til the meringue is golden, it doesn't have to be done so slowly when it is a pudding topping. I have eaten this myself and it's nice.

    Carrots? food of the devil, I hate them, but am currently chomping on a big raw one, it's the only way. Carrot soup is ok but carrots take so bloomin long to cook.
