  • Here's my mealplan for the week (all subject to change as things are a bit up in the air):

    Mon - Minced Beef & Onion Pie with Mash and Green Veggies
    Tues - Black Bean Chicken with Noodles
    Weds - Not Sure
    Thurs - Chilli con Carne with Sauteed Potatoes
    Fri - Homemade Baguette Pizzas
    Sat - Jambalaya

    Lunches are sandwiches or leftovers, and there are some bits of cake left as well as some mocha pot (mousse-type things) I've made which are in the freezer. I finally found a use for all the Gu ramekins I had in the cupboard! Whoo!

    I am always so late on this thread! Anyway, we shall mostly be eating:

    Monday: Asparagus quiche, HM potato salad, and salad
    Tuesday: Roast chicken, mash potato, yorkshire puddings, veg and gravy
    Wednesday: Lunch: Chicken caesar salad Dinner: warm goats cheese and balsamic vinegar dressed salad with garlic bread and cheese croutons
    Thursday: Beef stroganoff
    Friday: Lunch: Ikea meatballs, gravy and mash potato Dinner: Chargrilled chicken burgers and potato wedges
    Saturday: Egg, sausages, waffles and beans
    Sunday: HM fruity curry, rice and naan bread

    Friday: HM Bolly
    Sat: HM Lasagna with leftover bolly (friends over too, and still some left over :) )
    Sun: Chick thighs in honey and mustard with roast spuds, onions, parsnips and peas and sweetcorn
    Mon: HM veg curry
    Tues: Cauliflower mac cheese (Jamie Oliver recipe? never made before)
    Wed: HM veg curry (poss with grilled chick)
    Thurs: Sausages and mash
    Frid: Stuffed squid

    I have menu planned for 2 weeks with our last shop, although we have run out of bread already!! oh well been away from budgeting and meal planning for a while, can't get it perfect straight away. I will be back on here more regularly to get your input and see all your ideas :) thanks guys, life has certainly changed since having our little boy, but i really feel we need to menu plan and budget again and it will help me start planning his food for a couple of months time.

  • i tried for the first time last week, didnt get it completely right but it did mean i ate a lot less rubbish than i normally do!

    Mon:at friends house
    Tues: Spicey sausage spaghetti
    Wed: chinese chicken stirfry
    Thurs: fajitas
    Friday: HM pizza
    Saturday: Mushroom risotto or roast chicken
    Sunday: cottage pie



    i have lentil soup, Jacket potatoes veg lasagne for lunches.

    And i am going to attempt irish brown bread, lemon drizzle cake and madeira cake too!

    Finally turned the computer on at home so here is the recipe...

    Delectable Chicken with Broccoli

    Serves 4:

    1lb fresh broccoli; 1lb chicken breast or chicken thighs; groundnut oil; 3 tablespoons chopped garlic; 1 small onion sliced; 2 tablespoons chinese cooking wine (or dry sherry); 3 tablespoons water; 8oz tomatoes, quartered; 3 tbalespoons oyster sauce; 2 tablespoons fish sauce; 1 tsp sugar; pinch salt; 1/2 tsp ground black pepper; 2 tsp sesame oil; for the marinade: 1/2 tsp black pepper; 1 tablespoon fish sauce; 1 tsp light soy sauce; cornflour for dusting.

    Divide broccoli into florets, cut chicken into 1 inch pieces and combine with marinade ingredients (except cornflour) - leave to marinate for 30 mins. Dust pieces with cornflour shaking off excess. Heat 1 tblsp oil in a wok and fry chicken to seal (3-4 mins) - remove and put to one side. Add another tblsp oil and when hot add garlic and onion and fry for 1 min. Then add broccoli and fry for a further min. Add wine and water cover and cook for 4 mins. Add tomatoes, oyster sauce, fish sauce, sugar, salt, pepper and sesame oil - fry for another 30 seconds. Return chicken to the wok and stir fry for 3-4 mins until cooked and heated through. Serve.

    This is the version I made. The original deep fries the chicken rather than just stir frying.

    Everyone really enjoyed it and although there are a list of ingredients a mile long, if you like chinese food, they will not go to waste.

  • Here is recipe as promised (am hoping it's a case of better late than never).

    This recipe is for batch cooking. I'm cooking it just now and am going to freeze 2/3 of it. The recipe says it serves 10.

    INGREDIENTS:
    2 tbsp olive oil
    1.5kg pork tenderloin cut into strips
    2 onions cut into thin wedges
    4 crushed garlic cloves
    1-2tbsp smoked paprika
    500ml beef stock
    2 x 400g tins chopped tomatoes
    1 tbsp sugar
    3 peppers, chopped
    DUMPLING INGREDIENTS:
    250g SR flour
    140g shredded suet
    1 1/2 tsp baking powder
    small bunch oregano, most leaves chopped

    METHOD:
    Using half oil brown pork then remove and set-aside. In rest of oil fry onions until soft and starting to brown. Add garlic and paprika and cooks for 1-2 mins. Return pork to pan , pour in stock, tomatoes and sugar. Bring to boil then turn down and simmer for 20-30 mins until sauce has thickened. Stir peppers into goulash.
    To make dumplings combine all ingredients (except oregano leaves) with enough cold water to make dough. Roll into 30 dumplings and tuck into pan. Cover pan and cook for 25-30 mins until dumplings are puffed up. Scatter with reserved oregano leaves and some soured cream.

    i start my menu from a thursday so here goes.

    Thur- HM Lemon and herb chicken breast with mixed veg and chips
    DONE
    Fri- Hm Meat and potatoe pie, mash and peas and possibly gravy?
    Sat- Turkey drummers, chips with baked beans
    Sun- Roast chicken, mash, pots, yorkie puds, mixed veg and gravy
    Mon- Steak, Chips and peas
    Tues- Chicken in cheese and leek sauce, mash and veg
    Wed- Spag bol
    Thurs-Chilli from left over spag bol

    im getting hungry thinking about my pie for tonight, i use normal puff pastry and a can of asda sp stewing steak and asda sp irish stew with some fried onions and then put a layer of pastry on top make a fork hole in the middle cook until golden and its lovely my other half says it makes him really happy smelling it when he comes in the front door.
    Trying to make big cut backs!!!
