Yep, I whip the cream until light and fluffy and just holding its shape. I mix the splenda and the vanilla into the cream cheese and then combine with the cream. I just guesstimate on the vanilla and splenda - a case of trying it and adding as need be. It is totally delish and tastes to me very much like ice cream. I then top it with whatever takes my fancy - last time I had defrosted frozen mixed berries that had a sprinkling of splenda as they were defrosting. If I was not doing low carb, I would use icing sugar instead of the splenda.
Ooooohhhh, that sounds delicious! I must try it! I've got everything apart from the vanilla so will try it tomorrow without it then remember to pick some up on my next shop.
My favourite low carb desert at the mo (bear in mind that I'm not a great cook so don't try anything too difficult!:rotfl:) is 'strawberry swirl'. You basically make up some sugar free strawberry jelly, then when it is firm, but not quite set, stir in some double cream. I found it on a low carb website and thought I might as well give it a go as it was so easy, and I was really suprised at how nice it is! The flavours mix together really well, and the whole thing tastes delicious and creamy. It's actually good for most diets as you don't need that much cream (a couple of spoonfuls will do), and if you use Elmlea cream (lower cal) then the whole thing works out at around 50 cals per portion.moneysavingmam wrote: »Just found you all, enjoying reading your posts!

Spring is on the horizon though.......time to dig out the bike and cycle the 2miles to work. Then be suitably embarrassed at how unfit i am! lol!!

I'm not completely sure about this, but I don't think they use passwords anymore. I think you have to go to a class to get something to be able to access the website. I remember people discussing it a while back, but didn't take much notice as I'm not on SW. Congratulations on the weight loss! :T I do have to ask about diabetics not being able to eat chocolate though, as I've found that my son actually eats more chocolate now than he did before diagnosis (before exercise - as advised by his consultant)! It seems strange that we are being told different things, are you a diet controlled diabetic though? My son is insulin controlled, so that may be where the different approaches come in.
Well I've kind of given up on the Everest challenge for the day. I think I've managed about 12 steps :eek: - I don't even know the exact amount, and can't be bothered to go upstairs to find out (it's been a long day!). It is the first day that I haven't hit target though, and I usually do extra so I won't beat myself up about it. I'm not declaring it and will just add it onto tomorrows efforts.0 -

Well my family dinner went well today, My OH brother didn't recognise me despite being told in advance that I had lost a little weight since he last saw me- Approx 1yr ago. Anyhow good news- at the moment my Mum's tablets are still working well and she is looking very well indeedBut we find out exactly what is happening at the end of the month when she has her CAT scan's.
Only downfall today was eating 2 slices of birthday cake and now feeling really really guilty so done loads of sets of stairs since I have come home to compensate

Yes I've tried my step - done a paltry 120 steps yesterday and 300 today and my bum hurts so it must be doing something
Not sure I'll be able to get to the summit in March - but will keep trying (I'm currently at the back being the safety net making sure no one falls down past me:p:p)

I did about 15 flights yesterday, I spent most of the day sat on the lounge floor sorting out 12 binbags full of clothes and toys we dragged out of the girls' room. Their room is spotless, but the floor appears to have disappeared down here!
I'm having scale issues AGAIN - OH's taken the bathroom carpet up, and it was the only place I could get the same reading a couple of times in a row iyswim, everywhere else the readings fluctuate by a couple of stone! I'm gonna have to post a STS this week Fred, as I've been neither particularly good or bad

I like the sound of that... I have some sugar free jelly lurking at the back of a cupboard. I was thinking about de-carbing a trifle recipe to use it, but it just feels like too much effort at the moment lol. Strawberry swirl looks like the perfect solution0 -

Well done everyone losing and gettnig higher on the everest challenge. I'm just off to do some more steps today. Then might do davina DVD again later on as I really enjoyed it on Friday.
OH's off work this week so hopefully we'll play squash and go for a long bike ride at some point this week.
Plus, the sun has come outso I can finally get back to the gym! :j(I cycle up there cos I dont drive, and when it's dark and wet I just can't bring myself to go - also I'm a bit unsteady on the bike so dont wanna put myself in danger!!)
Hopefully by the end of the month I'll be cycling up there twice a week like I did before winter. I have found a Zumba class, a step class and a body combat class I wanna try too!!
Food diary for the day:
2 satsumas
3 teas with semi skim, 2 crumpets with flora light
(might have to give up tea for lent! Not sure I could do it thoWill prob just give up choc again)
Not sure about lunch yet, maybe some pasta salad. and an apple
Dinner will be lean beef stir fry with black bean sauce, loads of veg and plain boiled rice
(the beef and the veg were both yellow stickered in Mr T's this weekend :money: )
