Fred, a STS for me please

I keep thinking that one day I must have a big loss to post. I have upped my swimming to 32 lengths and have done this 4 days this week, but not lost even a part of a pound! However, I have lost an inch from my waist and hips, so winning there.

1.2lb gain for me this week. I'm wondering what I'm doing wrong. Going to post up the last few days food, I'd appreciate any pointers. I've got a week in Ibiza in 4 weeks, 2 weeks in the South of France at the start of August and a week in New York at the start of September, alli occassions I'd like to look my best in photos for!

    Monday
Breakfast: 60g shreddies, semi skimmed milk
Lunch: Basil, tomato, and chicken panini (382 cals), 25g dark chocolate
Dinner: 5 new potatoes, 1/2 cup roasted mediterranean veg, yoghurt and pesto dip, 1 scoop ice cream
    Bedtime: Glass of milk

    Tuesday
Breakfast: 60g shreddies, semi skimmed milk
Lunch: 1/2 an ainsley harriot risotto (around 280 cals) topped with 1/2 cup meditteranean veg, 5 quality street, 1 slice pineapple and an apple
Dinner: 1 slice oaty bread, 1/2 tin baked beans, 25g cheese, 25g dark chocolate

    Today:
Breakfast: 1/2 sandwich: 1 piece oaty bread, flora light, 2 slices quorn, rocket
Lunch: 1/2 an ainsley harriot risotto (around 280 cals) topped with 1/2 cup meditteranean veg, 1 slice pineapple, 15 grapes and an apple
Afternoon: 1/2 sandwich: 1 piece oaty bread, flora light, 2 slices quorn, rocket
Dinner: 1 small baked sweet potato, laddle of quorn bolagnaise, 25g cheese, 25g dark chocolate
    Bedtime: Small glass of milk

I think I may have answered my own question. We're trying to eat from the fridge, freezer and cupboards for a month (except fresh fruit and veg) and as a result I seem to be very carb heavy. I've swapped all my usual juice and squash for water so it's not that. What does anyone else think?
