Demerara sugar will be fine, but I'm not at all sure about honey instead of syrup. I think it has too much water in it to work properly. I may be wrong though, someone else may have had success with honey.

Just thought I'd double check ;):D There's a recipe here using honey and demerara. Is this like yours, oddsox?

I checked the recipe, but its not like the one the school have given my daughter.

Here's the one she was given:
    80g brown sugar
    110g butter or margerine
    250g oats
    110g milk chocolate
golden syrup (doesn't say how much)

Thanks for the above replies, i'll give her the demerara sugar & honey to take with the other ingredients, hopefully they will come out ok.

Well there you go :D Honey isn't as cheap as syrup though. I like the idea of using preserved ginger pieces in flapjacks.

Posted this on another thread yesterday - if you can't/don't want to use the oven

    Microwave flapjack -

    4 oz butter
    1 oz white sugar
4 level tablespoons (60ml) golden syrup
    8 oz rolled oats
    a pinch of salt

Put the butter & sugar in a bowl on full power for 1 minute, stir in the syrup & salt and stir in the oats. Put the mixture in a shallow greased dish and heat on full power for 3 mins. Leave to cool (I put them in the fridge) and cut into squares.

Just had to say made these yesterday and they taste fab:D
Even DD.......(fussy teenage) was seen eating them!

I made a 2nd batch replacing some of the oats with walnuts and apple..also fab.
And the best bit....................easy to do in a microwave:j

    Thanks smashing

I tried to make some a week ago and they ended coming out where I had to eat them with a spoon. They were very crumbly and not like the soft flapjacks you buy in the shops.
