Yes, pretty normal. Standard I would say. The Store Manager carries more weight than I think many on here give credit for - that is why I normally advise going through them before Dundee (Thats Store, not Duty Manager). If your letter raised as many questions as you suggest, it strikes me that a written reply is going to raise more questions in reply - a two way conversation is more condusive to moving things along.
If you are uncomfortable being taken off the shop floor, ask to meet in the cafe (try not to pick a busy time if you do that
). Not sure what the reaction to a witness would be - likewise with a soliciter (although I would imagine that would be a no tbh). As for recording...I would say no personally, but again I do not know what the answer may be. Who or what was I before you came in to my life
