    I had some in the cupboard, it had been opened, poured in onto my yoghurt and a green mouldy blob fell out! I threw up.

    Just wanted to check I'm right in what I'm thinking about my gammon joint. After bouts of illness, my gammon joint is still uncooked in the bottom on the fridge. It's a sealed joint and it's Best before date is Christmas Eve. It's still a lovely pink colour, but I wanted to check that it'll be ok to eat. I;ve just opened it and it smells meaty, but not unpleasant. Am going to pop it in tonight after a soak in water to get rid of the salty taste. Just hope I don't poison us all lol!

    If you are concerned in any way then put syrup through a strainer/sieve into a pan and bring to the boil. It can then go back into a clean dry jar/bottle and be kept in fridge. Have been doing this for years with no ill effect.

    As long as it's pure maple syrup it should be okay. Maple flavoured syrup on the other hand is very likely to go off.

    I personally would cook it this evening, put it in a big pan with some water simmer for about half an hour to remove most of the salt and then replace the water and boil away as normal. The salt content and the smoking of the meat should mean it keeps longer than if it was an unsalted meat. I would probably freeze a fair bit and just keep out what we were going to use immediately ie next 24hours. The old addage comes to mind if it smells ok - go for it!!!

  • Thanks Suzy, it's in the slow cooker with a tin of festive cheer ;-) It's starting to smell lovely, so will eat as normal. It was only a best before, not use by so I think we'll be fine. Thanks for the advice though! x

    How many days do you s-t-r-e-t-c-h the leftover turkey for?

    I saw a TV chef being interviewed just before Xmas & he said its good for Xmas day & boxing day, then chuck it:eek:

    Its a "high risk" meat (or some similar term he used).

    How long do you eat yours for?

  • Boxing day but I feel totally paranoid about eating it and blast it in the oven far longer than is necessary. Then binned.

    I kept one portion in the fridge to use as cold meat on boxing day, the rest has been frozen.
