re: Mexicans - we've been a few...
Isla @ TI:
http://www.treasureisland.com/restaurants/isla_mexican_kitchen.aspx
we've been for the happy hour drinks recently, but not eaten here since 2006 - it was good and has a vast tequila menu! (like, a serious one - hundreds it seemed, 'nutty textures', 'vanilla textures' and all that jazz... me and the missus had different ones and to be honest, it was just tequila!!! Our palettes mustn't be refined enough
Gonzalez Gonzalez @ NYNY:

Think this is a chain... it seemed like a chain - good greasy fried mexican stuff though (platters etc), and quite quick if you're in a rush
Tequila Bar & Grill @ Bally's

As per Gonzalez Gonzalez really
Yolo's @ Planet-Ho

Good food, but odd positioning (on the same level as people walking past - which as (IIRC) you're by the south entrance is quite a lot!) - had a great night here even though the Tomato salmonella issues across the states at the time were putting me off my salsa!!!0 -

the small print says "Food and drink credit valid only at Signature outlets". From memory, all there is there is a Starbucks and a bar.
and of course their food outlet Delights!0 -
OctoberWe used the credit we got at the Sig by the pool last year... its didnt take much doing with the price of the cocktails0

We really enjoyed eating in Diego’s at the MGM Grand:
http://www.mgmgrand.com/restaurants/diego-mexican-restaurant.aspx
Contemporary surroundings and the food and service were excellent. I think the price for a shared starter (as you also get complimentary tortillas with lovely fresh salsa), a couple of mains and a couple of beers was just shy of $50!I also forgot to mention the following that we've been:

Restaurant Week!
Restaurant Week will be spanning two weeks this year:
http://www.yelp.com/topic/las-vegas-restaurant-week-2011Once again, Three Square Food Bank will be partnering up with the finest restaurants in Las Vegas to bring you Restaurant Week 2011. This is your chance to sample the cuisine of world-famous Chefs at a fixed price with the proceeds going to help Three Square end hunger in Southern Nevada.
Specially-designed Restaurant Week menus feature three-course meals at three price points - $20.11, $30.11 and $50.11 per person.
And this year, in celebration of the 5th annual event, it will run a full two weeks- August 29-September 11, 2011!!!
Menus and restaurants won't be live till July 1; will anxiously be waiting to see who's in this year!!!!!
Here is the menus' from last year! We only did Diablo's but wish we'd got around to doing more
