did you by any chance use flour to thicken it? self raising flour? can cause a little fizziness but not sure about sweet taste.....sugar instead of salt? or maybe the passata was off. for safetys sake I would chuck it unless certain it could be first reason. you would know if mince was off when you defrosted it. unmistakeable!
another tip i have used in savoury dishes if they seem too sweet - a spoonful of vinegar! or worcestershire sauce - which adds to flavour anyway.0 -
I've made some chilli which is now cooling ready to be batched for the freezer. It's been off the heat for about 30 minutes now.
I forgot to taste it earlier, just tasted it and it's not hot enough. I usually use 1tbsp medium chilli powder and I've gone and bought mild chilli, didnt realise and only used 1tbsp of that.
My question is, if I stir in some more now it's already cooked will it turn out ok or should I just leave it and put up with it as it is.0 -
Put it in now, before the chilli cools. The residual heat will help the powder meld in, and if you make sure you give it a good heat and stir through when reheating it will be fine.Val.0

You could add Tabasco either now or when you reheat it

Mine is similar to rachbc - garlic, onion, brown the mince, add chilli, ground coriander, turmeric, cumin and fresh chilli (if any in the fridge) add tim of tomatoes simmer for 20 minutes add tim of kidney beans and simmer for another 30 minutes or so.Mortgage as at March 2010 £225,000 target for December 2012 £170,000.
