have you had a go at making the sandwich loaf, leaving out the dried milk powder?

this is the one i always make, and it always turns out fine ;)
  • This one has turned out very well for me and is in the cookworks book. Its economical on ingredients and doesnt give me indigestion. It doesnt keep as long as the ones with more oil in. As the MR breadmaker is the same as the cookworks it should work for both.
    Classic French
    (use setting 2 "FRENCH")
    LOAF SIZE 1.5lb
    Crust: Light
    Water 230ml
    Salt 1 tsp
    sugar 3/4 (three quarters) tbsp
    bread flour 3 scoops (390g)
dry yeast 1 1/4 (one and a quarter) tsp
    Oil 1 tbsp

I made the mistake of just putting 3/4 tsp sugar in instead of 3/4 tbsp and it still turned out fine.

Let me know what you think.

Also the Italian one (you can leave out the herbs) is lighter than the basic, or the French one? I quite like the sandwich one, too.

I also use only half the sugar stated, and I often leave out the milk powder.

can someone help explain something when ever i cook loaf the top stays white and doesnt really look cooked while the bottom and sides are lovely brown colour why would this be?
  • Hi after reading this thread I brought a bread maker. Looking at the receipes it includes as an ingredient bread improver. It does say that it is not necessary to include but improves the bread. I have tried to buy some but can't find any anywhere. Do any of you use it? and if so can you notice the difference?

Noticed in the latest Lakeland catalogue they have managed to find a supplier of bread improver again. Its about £8 but you don't need much, in fact when they gad stopped selling it I stopped using it. My loaves suffered so I made rolls. They work better for us as we don't eat much bread and HM bread goes stale before we can eat it!
  • Many thanks have found some for sale on e-bay will buy some and see how I get on. Tomorrows first loaf won't have any!

This will be a useful link for me as my dearest hubby threw away my booklet/recipes when transfering all the books into the new shelving unit and though it was just rubbish !

Oooh - this happened to me, you can download a PDF from their website. You can also order replacement tins, cups, spoons etc - I inherited mine from my parents so it must be at least 8 or 9 years old.
