Silly question about Vit c tabs - can I use the effervescent ones, or is there some other sort?

    Ta!

Tescos do a 'Value' bottle of Vitamin C tablets. There are 90 tablets for less than £1. The tablets look like aspirin, so are not the chewable/fizzy/orange type. I use one per loaf, after I have crushed it between two teaspoons, and add it to the flour along with the yeast.

Also, since the first loaf I made (following the recipe religiously) I have never used milk powder or milk and rarely use breadmixes. I also found there was a tendency for the mixtures to be too wet which caused the loaf texture to be similar to crumpets.

After four months of constant use, I now find 16ozs flour to 9ozs tepid water is a good ratio. I always check the texture during the first mixing cycle and add a small amount of flour or water as necessary. This quantity is baked on the 1.5lb setting.

  • I made a granary yesterday, I have found using ingredients separate rather than bread mixes far better. I also use the Tesco value Vit C tablets and the loaf did rise and stay that way.
I also did the hot cross buns, which are lovely and certainly be made again.
Tip..when doing hot cross buns and making a cros on top, instead of using a knife to make the cross, use scissors, this makes a deeper cross, which you then fill with almond icing...lovely....also add a few chopped cherries, the red colour ,makes the buns look even more tasty.
  • I am almost sure too you can't use the effervescent vitamin tablets, although I do stand to be corrected

I made hot x buns yesterday for the first time. Used the MR recipe, and they were brilliant! SO YUMMY  And of course so easy :D

Thanks for the tip of cutting the x - I used a knife and the x dissapeared!
    Almond icing... yummmmmmmm

Managed to add a bottle of Vit c tabs to my order before the Tesco man delivered it (Free delivery, and actually saved me a few quid using Tescos rather than my normal Waitrose/Sainsburys).
Pity they're not great for Vegetarians.

Anyway, I digress I added 1 1/3 vit c tab to the Hovis mix and it worked a treat, although at one point I thought it was going to burst out of the top of the machine!

Tasted fab with marge, and then with the Aubergine and chickpea goulash and I threw together whilst waiting for Mrs OWEI's return.

The bread lasted less than 24 hours (and Mrs OWEI didnt get back from work until late so wasn't too hungry).

Now Im going to try using the separate ingredients...should have plenty of time to whip up a lentil soup and prepare the Tofu steaks for tea whilst it's doing.

    Ever seen a fat vegetarian/vegan?
If it carries on like this with said BM, you certainly will...lol!

Forgot to add - the fold down blade was buried in the bottom again - if it keeps happening it's really going to irritate me!!!!

Ok, thanks for all your help yesterday. I have now purchased a MR Fast Bake.
I know it wont be here until next week, but wanted to see what your best recipes are for both bread and cakes.

    Many Thanks

    Hi angie,

I've merged your thread into the Morphy Richards fastbake thread where you'll be able to find some recipes for that particular breadmaker.

If you want to see the instruction manual/recipe booklet that comes with it, you can download it from here.

Also to find more breadmaker recipes have a look through The Complete Breadmaker Collection.

I hope yours arrives soon. There's nothing quite like making your first loaf. :)

My MR Fastbake arrived yesterday afternoon, & I made my first loaves today ... I would have done it yesterday evening, but DH has to go to bed early for a 2am start, & I thought baking bread while he was trying to get to sleep wouldve been a bit mean, lol, so I just read the manual from cover to cover instead.

Anyway ... this morning I made a loaf making the fast bake setting, which was very nice, but I now understand the comments Ive read from some users about finding this loaf 'cakey' ... I quite liked it, but it is a little dense. So, I then tried the basic white (2lb) to see if the texture were lighter ... but there wasnt much in it tbh.

Can anyone tell me which ingredient I need to play with to adjust the texture I get? Im looking for something less tight knit iykwim.

BTW the bread was absolutely delicious, not heavy, doughy, or yeasty, just slightly denser than I would like. Oh, & I have also read about some having trouble with the paddle staying upright, but this didnt happen with mine.

    Thanks in advance.

TBH I don't think there is much you can do as far as the fastbake loaf is concerned. The basic white is a bit lighter & drier, but we now prefer the fastbake one.
As far as we were concerned, we just got used to the different texture!
Also, don't forget you can't "compete" with the prepackaged cheapo stuff, that has air pumped into it as well. At least you know it's all good ingredients in your home baked loaf.
