  • Decided to have a go at a Brown Loaf today, haved successfully mastered the white and soft grain loaves.

    Disaster, or so it seems. Bought Sainsburys own Strong Brown Bread Flour, having read reasonably good reviews.

    Used the BM recipe, followed to the letter. Bread seems a bit stoggy, very rustic looking and a much smaller loaf than I would have expected from a large loaf. Still cooling down, so haven't tried it, but doesn't look very appetising.

    As we are out of bread, have put in a 1/2 and 1/2 loaf (white & soft grain). Hopefully, this will be ok.

    Any ideas on the brown loaf. What with my white rolls the other day and this, I feel a bit defeated and such a waste of time, electricity and ingredients. Oh dear, I fell a bread pudding coming on.

  • I bought my Fastbake March 2010. I have mostly made 50/50 wholemeal/white loaves. The last two have not risen as well. Usually the loaf rises until it almost touches (sometimes it touches) the lid. But the most recent two little more than half the size. This coincides with different flour - the wholemeal is Hovis. It doesn't look as brown as the flour which I have used. I think I'll try increasing the yeast. Anyone experienced this?

    In a word, yes! :) I've found that loaves made with Hovis wholemeal flour don't rise as much as with other brands, too - I can't tell you why this would be, though. I like the flavour of Hovis flour loaves, though, so I still use and just use a bit more yeast than the recipe suggests.

  • I increased the amount of yeast and the bread rose a bit more. I could increased the yeast a bit further I can't help wondering if a splash of orange juice might help - I don't have any vitamin C tablets LOL!
  • My paddle remained in the tin today. On the weekend it came out with the loaf but didn't drop down. Still two nice loaves though but I tried, today, greasing the paddle with some olive oil (I'm now leaving it soaking in water). If nothing works perhaps I'll need to request a new paddle..(?)

    Just came across this thread as I have been having issues with my MR Fastbake.

    All loaves I made come out heavy and dense. I find the recipes from the manual far too sweet as well.

    Im tempted to throw in the towel and get a panasonic so is there another set of recipes I could try?

    If you have a good recipe which works well in the Fastbake please share it!

    my first BM was a MR Fastbake & to be honest every loaf it produced was heavy & 'cakey' even when I'd cut down on the excessive sugar
    no matter what recipes I tried, it never ever produced any decent bread

    then it broke, & since then I've used both a Panny 255 & a Kenwood 450 & the bread they both make is fabulous, like day & night compared with the MR

    if you can, buy a new machine (I think some of the previous generation Pannys are going for good prices just now) you won't regret it
  • I've had my Fastbake for 9 years now, and since getting it I've never bought a loaf. I did find that the recipes in the manual produce very claggy bread though, so now I use only half the amount of oil (olive, sunflower, rice bran - whatever's around) - and the results are fine. I also use only half the amount of yeast (but then I don't use any salt).
  • Anyone have any recipes for making scones (or, at least, scone dough) with their Fastbake?
