Thank you for the recipes - I have cashew butter to use up, it is very claggy to eat neat but adds a brilliant taste to foods in the same way as the peanut butter.
I have never heard of this! I love cashews, and would love to know where you got it from CCStar?

This might sound a strange soup but it's wonderful and always very popular with guests who ask me for the recipe.
2tsp (10ml) groundnut or sunflower oil
1 onion, peeled & finely chopped
2 cloves garlic, crushed
1 red pepper, deseeded & finely chopped
4oz (125g) fennel bulb, diced
4 oz (125g) smooth peanut butter
2tsp (10ml) aniseed (I never use this ingredient)
1/4tsp chilli powder
1tbsp (15ml) concentrated apple juice
juice of 1/2 lemon
1 pint (600ml) vegetable stock
salt & pepper
Serves 4: per portion Carbohydrate:10.4g, Protein: 9.1g, Fibre: 4.6g, Fat:19.6g, Calories: 250
preparation time 15 mins. cooking time 40-45 mins.
METHOD: 1) Heat the oil in a pan and gently fry the onion until soft and translucent. Add the garlic, red pepper and fennel. Cook for 3-5 mins.
2) Stir in the remaining ingredients and mix thoroughly. Cook for 40-45 minutes, stirring frequently.
3) Season well and serve hot.0 -

Here's one of my favourites, peanut butter chocolate fudge:
1 jar of peanut butter
1 tin condensed milk
350g dark chocolate
Melt the chocolate and peanut butter together in the microwave, then stir in the condensed milk. Pour into a baking tin (lined with greaseproof paper) and leave to set in the fridge. It will set really solid, you can then turn it out of the tray and cut up into squares. Yummy!

Here's another weird sounding idea for sandwiches - PB and tomato or PB and cucumber - best thiny sliced and sprinkled with salt. I've been eating these since I was a kid, and they are yummy!Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.0

You can get it from Goodness Direct prices vary, if you do a search you can find it from about £1.99 for a 170g jar.
