Pork and peanut noodles.
Need:
Rice noodles (or any other noodles or rice will do)
pork mince
peanut butter
soy sauce
chilli
brown sugar
cook pork mince till "bitty" and crispy. Make sauce with chilli , 2 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp sugar, bit of water to mix it together. Add sauce to the mince. cook through.
Cook rice or noodles, serve with corriander.

I got this one from a friend last week. Made it on Thursday for some of my family coming round and it went down a treat. It's pretty sweet though!
Peanut Crunch
6oz crunchy peanut butter
1oz butter
10oz milk chocolate
1 small pack rich tea biscuits
Additional milk chocolate or white chocolate to top
1. Melt first three ingredients together in a pan
2. Crush the rich tea biscuts and add to the melted mix
3. Spread in a tin and allow to cool.
4. Cover with more melted milk or white choc and allow to set.
5. Cut into slices and eat.
Yum!!
I didn't use much additional choc as I felt it was already pretty sweet but you could amend as you prefer. Bonus is that it take hardly any time to do and no ovens involved. Perfect for me!

My oh discovered that crunchy peanut butter works a treat in mousetraps - you could say it was fataly attractive for Devon mice; not sure about the smooth variety!
I can concur with this, I think it is the fact they can't nip it out slyly but have to stay for a lick and then BAM! (soweee for those worried about mice but the last one I caught survived intact but just got stuck in there until I could take it outside and release it, I just won't mention what DH did after that) but Scottish mice seem very keen on cheesy quavers too. (see above) I just happened to be eating a packet when I saw something scuttle past the skirting board so that got used as bait and I had caught my mouse by morning. I HATE mice.:mad:0 -

I posted this in reply to someone wanting to use up coconut but it could apply to you too - and it's very very yummy!
Ingredients (to make approx 3-4 portions)
any veg - I tend to use onions, courgettes, leeks, babycorn peppers etc but you can use anything basically - you might want to add chicken too
100ml hot vegetable stock
100ml hot coconut milk (either from a can or made from powder)
3tbsp peanut butter
3tbsp sweet chilli sauce - I use linghams
2tbsp light soy sauce
noodles
couple of handfuls of peanuts
Method
Mix together stock, coconut milk, peanut butter, chilli sauce, soy sauce and give a good stir
Put the noodles on to boil
stir fry whichever veg you've chosen - to stretch it further you can put in a tin or two of pulses if you like
Once veg is cooked add satay sauce and heat through
Poor veg & satay over drained noodles and sprinkle with a few peanuts
Enjoy - it is yummy and tastes luxorious!0
