    I have been really inspired by some of these threads and I now have lots of ideas to use up stuff from the kitchen and not just throw it away. Thanks! :)

    I wonder if any of you would have a good peanut butter cake reciepe? My colleague and I were talking about them the other day but we couldn't seem to find a decent receipe.

    Can anyone help? Or even cookie reciepe.

    I've got a 'peanut butter bread' recipe which is yummy if that's any good :confused:

    here you go...................

    peanut butter cookies

    5oz peanut butter
    3oz marg
    7oz sugar
    1 egg
    1/2 tsp vanilla essence
    5oz plain flour
    1/2 tsp salt
    1/2 tsp bicarb

    cream peanut butter and marg together
    beat in the sugar, egg & vanilla essence
    then add rest of ingredients and mix well
    form into balls about 1"
    put on baking tray and flatten slightly with a fork
    bake for about 10min gas 5

    sorry i haven't got it in grammes, this was my great granma's recipe :D

    I posted this in reply to someone wanting to use up coconut but it could apply to you too - and it's very very yummy!

    Ingredients (to make approx 3-4 portions)
    any veg - I tend to use onions, courgettes, leeks, babycorn peppers etc but you can use anything basically - you might want to add chicken too
    100ml hot vegetable stock
    100ml hot coconut milk (either from a can or made from powder)
    3tbsp peanut butter
    3tbsp sweet chilli sauce - I use linghams
    2tbsp light soy sauce
    noodles
    couple of handfuls of peanuts

    Method
    Mix together stock, coconut milk, peanut butter, chilli sauce, soy sauce and give a good stir
    Put the noodles on to boil
    stir fry whichever veg you've chosen - to stretch it further you can put in a tin or two of pulses if you like
    Once veg is cooked add satay sauce and heat through
    Poor veg & satay over drained noodles and sprinkle with a few peanuts
    Enjoy - it is yummy and tastes luxorious!

    Hi, I made some peanut butter this week but the found it to be so so & it isn't sticky enough to spread on toast etc. It tastes ok and I have about a lb of it plus several more bags of spare peanuts (long story) to make more if I want to. Is there anyting I can bake with peanut butter in? Ideally soemthing I could freeze, maybe a snack type treat thing for kids lunch boxes..... Or anything else I can do with it tha doesn't involve me eating a spoonful every time I open the fridge and derailing my diet?!?!

    How about Pipi-An, a Philipino dish:

    0.5lb bacon bits
    4 chicken quarters
    1 onion, chopped
    100g mushrooms, sliced
    250ml chicken stock
    1 heaped teasp ground chilli
    2 cloves garlic, crushed
    2-3 carrots chopped
    2 peppers chopped (green for contrast)
    1 can chopped tomatoes
    2 tablespoons soy sauce
    6 tablespoons crunchy peanut butter
    1 tablespoon oil

    1. In a saucepan, bring the chicken pieces, chicken stock and chilli to the boil. Simmer for 20 minutes.
    2. Meanwhile, in a much larger pan, fry the bacon until the fat runs. Add the onion fry until clear, then the garlic and mushrooms and fry until the mushroom water has evaporated.
    3. Stir in the peppers. and continue frying.
    4. When the chicken time has expired, add the contents of that saucepan. Be careful - it will splash.
    5. Stir in the peanut butter, the soy and the tinned tomatoes. Add the carrots and anything else not already added. Bring back to a simmer and simmer for 20 minutes or so until the sauce is thick.
    6. Serve on rice.
    Apart from the onion and garlic, all veg is optional. This can be made equally well with chicken thighs, chicken breasts (cubed) or random trimmings/leftovers from a roast turkey/chicken (in which case, skip the 1st stage).
