    My oh is from The Gambia, and he makes this for us a lot. It is absolutely gorgeous!! We have it with rice and im not a lover of peanut butter at all, but i always have seconds of this!

    Domoda

    cooking oil
    one pound (more of less) of chicken
    one onion, chopped
    one clove garlic, minced (optional)
    1 tin ofcanned tomatoes
    1 tbs tomato puree
    Maggi cube (can be bought from african shops, taste gorgeous), or bouillon cube, beef broth or stock, or vegetable broth
    squash or eggplant, cubed (optional)
    4/5 potatoes cut in half
    one hot chile pepper, cleaned and chopped (optional)
    juice of one lemon (optional)
    one to two cups peanut butter (natural and unsweetened) salt, black pepper, cayenne pepper or red pepper (to taste)

    What you do

    Heat oil in a large pot. Brown the meat (if you are using meat) and onions.
    Add all remaining ingredients, except peanut butter. Add enough water to cover. Bring to a boil. Reduce heat and simmer until everything is done (twenty minutes or so).
    Stir in the peanut butter. Continue to simmer on a low heat for ten minutes, stirring often. Adjust seasoning. When the Domoda is done, some of the oil from the peanut butter will separate and float to the top. It may be partially removed, if desired.
    Serve with boiled Rice.

    I love peanut butter so some options:
    Peanut butter and jam sandwich (I know you said you didnt like it in sandwiches, but people here dont really have peanut butter and jam alot. As an American I grew up with the stuff)
    Smear it on a wrap, put a banana in the middle, wrap it up, and you have a banana peanut butter wrap. Very healthy and filling
    Definately do with apple. First, cut the apple into bite size bits then microwave it for like 4 minutes. The heating really brings out the flavor. Then smear some PB on each bite. Again, a great, filling snack.

    You can usually add peanut butter to soups if you blend it in well.

    We recently had a diversity week at work and our department had to make African food. I made this and it was yummy!

    African Chicken Stew


    I just brown my chicken with the onion and garlic and threw everything into my slow cooker - it made enough for about 12 people although the recipe said 6! Very popular on the day! Enjoy!

    I've just made 'Queenie's 3 Ingredient Peanut Butter Cookies yun yum they are lovely!

    Thank you for your recipe, and they used my whole jar up...problem over...except i think i may have to buy another jar to make more cookies for the family

    I suspected that might happen- anyone who says they dont liike it, needs to try it again!

    I am a massive fan ( did i mention :o) and wholeheartly rate the tesco value one at 46p ( ish) it is superb.

    I made satay sauce with it last night on chicken skewers with veggie soy noodles - it was lovely!

  • Gado Gado - a Malaysian or Indonesian dish (I had it in Malaysia and have made a version of it at home since).
    It is comprised of vegetables which are cooked and then used to dip into the sauce (can also be used as a dip for raw vegetables - I've eaten it both ways at home and in Malaysia).

    I bought a jar of smooth peanut butter yesterday with the intention of making Gado Gado myself.

    The amount of chilli can be adjusted of course and I believe the Indonesian version can sometimes contain a little fish sauce or shrimp paste.

    Sounds (and looks) a bit weird, but I know a French woman who just gets big dollops of PB, rolls them into long thins sausages and leaves them to dry. Then her family eat them as crunchy snacks. I don't even like PB and I pronounced them "okay" so PB lovers would prob get overexcited! :rotfl:

    NB: Be careful if you've got dodgy teeth for whatever reason, they dry very very hard - crunchy is an understatement!
