Jamie Oliver's "Everyday Chicken". Please google it as it is on the internet. Basically you put chicken portions, cherry tomatoes, herbs, potatoes, cannellini beans, garlic in a very large casserole. Bung it in the oven for 2-3 hours and leave it. Tastes great and it is a one pot meal. Please check oven temperature on internet and leave lid on. As far as time is concerned it will suggest about 1-1.5 hours but I find it is only ready when it has been left on for much longer.

That looks fantastic. I think that might be what I do, with maybe a crumble for pud as others have suggested.

    Thanks

Good choice! here is the link http://www.jamieoliver.com/recipes/home-cooking-skills/everyday-crispy-chicken-with-sweet-tomatoes
Please make sure that you put the lid on and perhaps turn it down slightly if you are going out for 2.5 hours. You can always brown it up and take the lid off when you get in...otherwise you may overcook it. I use a le Creuset cast iron casserole. For dessert I do an easy bread and butter pudding. Have a good day.

big pots of chilli/curry? if you make rice, please make sure it's cooled quickly& stored in the fridge then reheated to piping hot

baked pots are cheap & easy & you could do both hot & cold fillings for everyone

I do a buffet for my family for Boxing Day each year - baked potatoes are a good hot choice as you can make hot and cold toppings to go with them. Or you could make a couple of soups to choose from and have some parbaked rolls to go with them.

Slices of pizza, HM garlic bread, chilli with nacho chips/wraps to dip into it (safer from food poisoning point of view than rice), slices of HM quiche, mini toasted sarnies, sausages/veggie sausges, beans, chicken portions.........

    Hi :)

We have a whole bunch of threads on various buffet needs and it might be worth a browse to pick up some ideas...

buffet threads here on Old Style MoneySaving

ps.gif The nice thing about a chilli or curry is that you can make it a day or two before (and reheat thoroughly when needed) so that:

alphabet0.gif It tends to mature and taste much nicer

alphabet1.gif You get to spend more time with your guests instead of having to be very busy in the kitchen.

ps.gif Don't make it too early so that you have to freeze it. That way you can safely freeze leftovers if you have any :)

We tend to do jacket spuds for a hot buffet then do a curry or chilli, a nice beef stew/casserole and quiche and salads
