Ideas for really cheap easy Buffet food please!!

  • For hot buffets mum always used to make chilli, sweet and sour chicken or pork and a mushroom stroganoff. The sides were a choice of rice, chips or jacket potatoes.
    She used to store it in her £8 car boot bargain hostess trolley. She bought me a table top one and it has come in really handy when making meals for a larger number. Any chance you could get one of those - they tend to go cheaply on ebay.
    For the ultimate in ease we have plastic bowls or plates.

    For cold buffets it is best to have food which can be eaten with one hand or without utensils. When catering large buffets we used to butter the bread the night before and place it buttered side to unbuttered side back in the bread bag. In the morning we could just lay half the slices out on a table, top with the filling and cover with the other half of bread slices and cut into quarters. Triangles always look lovely on a platter especially if you do a chequerboard effect with brown and white bread and garnish with a little salad.

    Old fashioned (but probably kitsch now!) is vol au vents. They always go down well and can be cooked the night before ready for filling in the morning. I make chicken curry filling, egg mayo, cream cheese and salmon bits, cheese and spring onion but you can let your imagination go wild.

    No utensil food can be gem lettuce filled with prawn cocktail (should be left out for a max of 2 hours) and bread sticks wrapped with parma ham (or wafer thin ham is cheaper).

    Fancy sausage rolls. Bagels spread with cream cheese and a bit of smoked salmon, cut into bite sized slices. Salads. Falafel. Good bread, cold meat, cheeses. Olives.

    We have loads of buffet lunches with workmates so I am trying to think what we have!
