Ideas for really cheap easy Buffet food please!!

    Another nice finger food idea is to wrap rashers of streaky bacon round medium sized mushrooms, secure with toothpick (leave some sticking out to be a handle if serving warm). Season to taste (I like a dribble of soy sauce) and grill / bake. Delicious served warm, pretty darn tasty cold! Can be made in advance and gently re-heated in the oven.

    How about a giant pan of slowcooked chilli, jacket potatoes and bowls of grated cheese, sour cream and tortillas? I saw this once in a cookbook (I think nigellas' 'feast'?) under the 'entertaining' section and I thought what a great idea. The chilli could be cooked the day before even, and the potatoes just bunged in the oven and forgotten about -minimal stress!

    I have done quite a few buffets as i too have the most room and get volunteered!

    Our staple buffet food is a large roast gammon sliced, a turkey breast sliced, different types of bread (homemade if i have time), quiche for the veggies, sausage rolls, mini pizza, mini sausages for the kids. Salads include normal green salad, homemade coleslaw (can't bear the shop bought type), sweetcorn and kidney bean salad (dead easy - finely chop a red onion, open a tin of sweetcorn and tin of kidney beans and drain - mix all together and add some chopped coriander), tomatoes and cucumber (cos i find the kids like them separately), a cheeseboard with various crackers, a trifle or cheesecake or something that can be made early and forgotten about.

    If loads of people are staying overnight then, for breakfast, i either buy in shedloads of croissants or we do shedloads of bacon sarnies. It stops all the "what do you want? right one cornflakes, one muesli, one toast and marmite, one croissant..." you get the picture.

    that pretty much sums it up.. I have been volanteered IE told its happening. I am also not keen on stress. I considered the chilli and baked tattie idea but there was a debate over spice level so i kicked that into touch, I was planning of doing the old slowcooker of chili, slow cooker of curry tatties and rice but too much of oo what is little cousin jeanie doesn't like ...... so i though ok cold buffet of bits that do not need to be kept warm or eaten warm...

    So far I have 2 types of quiche, a veggie frittata, pastry things with pesto and tomato, maybe bacon cheese and tomato. A bowl of green salad, potato and onion salad, maybe HM colslaw if i can find and easy recipe (i don't like the shop bought stuff either) and maybe a savory rice/pasta if i can find a decent recipe. Some HM fudge, cherry and almond muffins and some little french fancy type cakes. I was considering maybe some brushettas just because my kids love them.

    For HM coleslaw I just use grated carrots, shredded red cabbage (gives it an awesome colour and is scrummy), but you could use white cabbage, and mayonnaise plus a splash of lemon juice - easy and so much nicer than shop bought :)

    When you mix in the mayo, don't use too much as some moisture will come out of the carrots and cabbage. You can always add more later ;)

    For home made coleslaw, i have recently been using grated celeriac. Nicer than the cabbage IMO

  • I'm doing a buffet for extended family next Saturday and i'm scared :eek:

    Someone suggested i get mini yorkshire puddings & fill them with a slice of roast beef, some horseradish/gravy and a sprinkle of rosemary, i thought it was a great idea :o

    Other than that i'm doing the favourite chicken curry in the slow cooker, stovies (family can't get enough...), salad, sausage rolls, pork pies, savoury eggs, mini sausages, coleslaw & potato salad, cold meats.
    For pudding i'm doing a 'make your own sundae'. I got an ice cream maker as a wedding present and i've fallen in love with it! I'm making 4 different types of ice cream (vanilla, raspberry, mint choc chip and cookies & cream) and serving it next to wafers, sprinkles, fruit, flakes, marshmallows and a few sauces so they can create their own :o Also making shortbread and cupcakes. And my speciality - strawberry & marshmallow kebabs stuck in a pineapple (kids love it!)
