  • i made a veggie nut roast topped with roasted butternut and red peppers, rocket and onion gravy, was gorgeous and was better than the meat ( turkey option)

    I'm a bit late but didn't see this :D I'm a vegetarian, as is my sister.

    For Christmas lunch we had a Quorn chicken roast - it was quite yummy and it's easy and simple for my parents.

    Holy thread resurrection Batman!

    Anyone remember sosmix? Great fun! I normally make nut roast for xmas dinner with lots of different nuts, seeds and veggies. Must get about ten a day at xmas! :D

    Oh this is an interesting thread, thanks for bumping it up, for those thinking about Xmas this year, already!, there's a great recipe for a roast to make from a Linda McCartney cookbook from a few years ago, I make this every year, it's lovely, the whole family enjoy it (I'm the only veggie) and it can be served with all the usual trimmings ie roast potatoes, mash, veggies and Bisto Onion Gravy (it's veggie!). If anyone wants the recipe let me know and I'll dig it out. :D

    Hi Cheeselady! The recipe would be marvellous if you don't mind! I have 'Linda's Kitchen' but cannot see it in there?

    I will find the book, we moved house a couple of months ago so will have to search for it, as I have no bookshelves in the new kitchen I'm trying to think where I put it. :o Will def post it on this thread when I find it! :D

    Oh and the stuffing is gorgeous too, so will post that as well.

  • I'm doing an large early Christmas lunch for the extended family. There are a couple of non meat eaters who eat fish, so that's easy, I was planning to do salmon for them.

    However there are also two non meat/non fish eaters and I don't have the first idea what to cook for them, ideally I'm looking for something that they can then eat the roasties the veg that the meat eaters will eat.

    I will talk to them when I've got some ideas but it's a bit tricky to do that now..

  • When I was vegetarian I made a brazil nut roast from a Rose Elliott cookbook I no longer have - it was wrapped in puff pastry and was lovely. Does anyone have a link or recipe for it?
