    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]1 stick celery
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]200g mixed nuts (e.g. almonds, peanuts, brazil nuts)
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]2tsp Marmite
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]2 free range eggs
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]1 or 2 tsp mixed herbs
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]salt & pepper
    [/SIZE][/FONT][FONT=Arial, Helvetica, sans-serif][SIZE=-1]Dried breadcrumbs (for coating tin) [/SIZE][/FONT]

    [FONT=Arial, Helvetica, sans-serif][SIZE=-1]1. Set oven at 190°C/375°F/Gas Mark 5.
    Put all the ingredients except the breadcrumbs for lining the tin into a food processor and process until vegetables and nuts are chopped into chunky pieces.

    [FONT=Arial, Helvetica, sans-serif][SIZE=-1]2. Line a 450g/1lb loaf tin with a strip of non-stick paper, grease well and sprinkle with dry breadcrumbs.
    Spoon mixture into tin and level the top.

    I do something similar every year.

    Quorn roast, wrapped in stuffing and then wrapped in short crust pastry.

    I like it because it slices so can be served with the main christmas meal for the meat lovers in the family and it's delicious cold too.

    i agree with using a quorn alternative, they usually have their own version of a roast that you can always add quorn rashers etc on top, you can also buy vegetatian stuffing balls etc
  • Nope, but I have a few suggestions. There is a veggie haggis recipe on the grocery challenge, it is fantastic, or if that's too much hassle, Mr T are doing 2 Halls veggie haggis for £3 just now, it smells a bit weird but tastes lovely, you could mix that with some grated carrot and swede and wrap it in filo pastry, or make it into a sort of Wellington with a cranberry sauce in it. If you buy sosmix, or Asda's own version, which is 79p, you could make that into a kind of stuffing, I use sage and onion veggie stuffing with that, nibbed nuts and onion and a bit of corn, again you can half cook it and wrap it in pastry if you fancy it. I also have a lovely recipe for vegetable croquettes with chestnuts which is gorgeous, but its not on this computer, I will post it later for you - or if LameWolf is reading it she may have it, as I passed it onto her too.

    I was going to suggest a nut roast - made with cashew nuts.

    personally - I'm not keen on nut roasts with peanuts in. On the other hand - a nice nut roast with cashews in - now you're talking...:D

    A luxury type nut roast IS the basic vegetarian equivalent of turkey on Christmas Day.

    BTW - You will need to check that the Christmas Pudding doesnt have a non-vegetarian type of suet in it:eek:. Christmas Puddings are such a faff to make that everyone (including me) expects them to be shop-bought - so just check the label to ensure that it IS vegetarian. From memory Marks & Spencer make a nice vegetarian one.

    :rotfl: Have you ever made a Christmas pudding - they are the easiest thing in the world, taste divine, and you can make a luxury one for the price of a very ordianry shop bought one. AND - you can be sure it's veggie, if you prefer!

    And I'm not the only person who thinks so :p

    Oh wow thanks for the swift responses.

    I'm now starting to worry about the concept of doing three different meals!

    Could I make a nut roast in advance and heat on the day? Think I might give the fish eaters nut roast as well!

    Thanks for the heads up on the Christmas pudding, my aunt is making one and I'll check with her but she was telling me the other day that she only uses vegetarian suet so hopefully that's OK, her daughter is vege so I think that should be OK. Will check though.

    Errr...thanks...but personally I will stick to treating myself to a Marks & Spencer one. EIGHT hours steaming it:eek: and I dont use silver foil - so I get myself "tied up in knots" every time thats suggested as to what else I can use - visions of pudding cloths.....:(
