November work lunches challenges

  • Had pasta bake that my collegue made with salad today. Tomorrow having HM chilli, cous-cous wraps with salad, creme fraiche and a bit of cheese - yummm. I'm off work Friday and Monday so just got one more lunch to make. Roll on December... :)
  • Not long to go now - 4 more days.

    Going on a course tomorrow - lunch and tea provided so can eat properly for once!

    Proper saving the money by doing this though - still got my £10 in my wallet just in case but not needed it so far.

  • Everyone seems to be doing really well! Keep up the good work guys. I see everyone is sticking to the staple soup and pasta brought from home. Well it is so cold brrrrr. I've had some packet pasta (we have a microwave at work - thank god) and some toast and a nice cup of hot chocolate. It was 99p in Home Bargains, but is already half empty. I suspect i'm going to have a long journey home as it took me 2hours to do the usual 20min bus ride this morning. I've got my wellies and am going to take some biccies with me for the journey in my bag and have a cuppa as late as possible before we go home so i'm warm on the inside!!!!

    I'm going to rake round in the cupboard at home cos someone mentioned banana or a piece of cake with custard....and I've wanted some ever since. So i'm going to have a root through and bring some in 2moro for my lunch. I suppose a nice bowl of porridge would do the same (its warm and a pudding) but I feel the need for comforting custard when its cold and nasty.
  • Like missworks2jobs has just said, everyone is doing brilliantly. I had arranged to meet my bestie for lunch today, but this challenge has really got me and I didn't want to miss my target. So I bought in lunch and scoffed it before we met and then just had a cuppa while she had lunch!

    We're nearly there now. Who thinks they will meet their target?

  • That sounds lovely - could you post the receipe please.

    I found some carrots as we were tidying up the garden yesterday so made carrot, lentil and ginger soup. I really enjoyed it and have some left over for lunch tomorrow.

    Hi, the recipe is really quick & easy:

    2 0r 3 red peppers cut in half length ways & deseeded
    A large can of butter beans, or chick peas or lentils, or a combination of your preferred pulses
    garlic to taste
    olive oil
    tabasco (optional, but I dollup it in!)
    tahini to taste
    salt & pepper

    Place the peppers under the grill skin side up & grill until the skin blackens & blisters. Then place them in a plastic food bag & seal. Leave for 5 minutes - this will enable you to remove the skins really easily. Place in a food processor with the rest of the ingredients & whizz it all together.
    I sometimes add roasted courgette if I've got 1 or 2 going spare.

    You can play around with it until you are happy with the consistency/texture by adding more oil to make it runnier or thicken it a bit by adding more pulses. I find a couple of tablespoons of tahini is usually sufficient, but its down to your own preference!

    This is lovely on toast or as a dip too x

    Kate-pixie I didn't set a target as join the challenge half way through the month but have managed to take lunch in everyday since then. I have definatly saved money and also used up things that I maybe would have thrown away.
  • Bah! I totally failed myself today. A last minute offer of lunch with a friend I haven't seen in ages came up and even though I had a packed lunch in the office I still succumbed to the temptation of a burger in the cafe! Boooo!

    Ah well. I have the day off tomorrow, so definitely having lunch at home. That's me declaring 17 out of 22 possible packed lunches for November! I hope you've all been successful in your pledges xx

  • Having jacket potato, tuna and salad tomorrow. Looking to set a target for Decemberm-will have to work out how many days I'm at work.
  • I am still on track, but took an unexpected day off work last Friday, so need to adjust my declaration/target from 22 home made lunches to 21 please.

    Took some soup from the freezer in today. Its been in there ages; I know I made it last year & I remember it was predominantly marrow with potatoes, onion & garam masala, but am vague about what else I put in it. It was pretty good all the same.

    Last day tomorrow & then shall be paying my pennies in.

    How is everybody doing?
  • well done guys, I've managed NO bought lunches this month - woo hoo! :T

    Today i've got more soup....well its awful weather and its so easy to just grab a tin from home as i'm scurrying out of the door. I'm going to try remember to bring in a little packet of pasta so I can put that in the bottom of my soup to make it a bit more filling.
