Parsnips!!!

  • parsnips are lush in a veg curry

    fry some onions until they are a bit burnt arond the edges ( seems wrong but will enhance taste coniderably! properly is a thing in indian cookery)
    Add chopped parsip, carrot, squash, pumpkin etc
    plus some curry powder..... and/or mix of bit of cumin, coriander, tumeric.... plus garlic and ginger and either chili or cayenne pepper. Could add some lentils, depends what end producy you're going for.

    Also add some apple, or sultanas etc, whatever you have. (please note this would make genuine indians turn in their graves, but it tastes nice!)

    Then add some chicken stock (made from cube) and/or water and a tin of tomatos
    it's all to taste so quite free and easy. you can mae it into curry or tagine at this stage depending upon ingredients.

    cook it for as long as is sensible and then if it's a curry add some cream or yogurt etc. Could also add tin of chickpeas or soem cashews etc.

  • by indians I don't mean any kind of bad thing -just mean my best friend serena who is sikh and inds fruit in curry to be a english thing.

    I hate fruit in curry too, apart from a bit of lime pickle as a side dish.
  • in general, I think you can use parsnips anywhere you would usually use either carrots or potatoes (wihtin reason)
    plus parsnips are more pleasing to peel. or is that just me?

    hi guys,am about to cook a full roast for friends and theyve asked if we are having roast parsnips,i dont like them so have never had to cook them......any easy recipe? do i par boil them first like the potatoes for roasting?how long for?are they ok to go in with the roast potatroes in the oven? same amount of time?

    To roast parnsips, parboil in milk for 2-3 mins, place on baking tray and drizzle with olive oil. Roast on top shelf of oven gas mark7 for 20-25 mins in total (if they are thin, longer if thicker) - removing 10 mins before the end and drizzling with honey if you like it (we do lol).

    Lovely recipe for apple and parsnip soup:

    450g parsnips
    225g apples - cored
    100g onions
    50g butter
    1 pint veg stock made with 2 veg stock cubes
    2 bay leaves
    1/2 - 3/4 pint milk

    chop parsnips, apples and onions and soften in butter in covered saucepan for 10-15mins.

    Add the veg stock and bay leaves and simmer until all soft (15-20mins).

    Remove bay leaves and liquidise with stick blender until smooth, add the milk and return to heat and warm gently. Add salt and pepper to taste.

    Really tasty and easy peasy to make!!

    I got 3 x 500g bags of parsnips in Tesco last night for 8p each!!! What can I do with them? Does anyone have a recipe for a parsnip soup? I think I remember there being a curried parsnip soup around at one time but I can't remember what it entailed.

    Parsnip crisps also really tasty - just cut the parsnips really thin - helps if you have one of those mandolin (?) thingies. Then deep fry them! Yum yum:D
