    Hi mardatha,

    They're lovely roasted in a little butter or added to casseroles and stews. They make a good base for soup too. There's an earlier thread with lots more ideas so I'll add your post to it to keep the suggestions together.

    I make parsnip and apple soup
    boil parsnips (peeled and quartered) and 2 apples (not peeled just cored and chopped) add a splash of apple juice if you have it and simmer until soft then blend, adding a little milk until the consistency is to you liking, season well with a little salt and lots of black pepper
    et voila!!
    Go hopefully into each new day, enjoy something from every day no matter how small, you never know when it will be your last

    Boil them in a little milk and water with some added salt and sugar then drain and puree(reserving a little liquid to add to the puree), lovely with some sea bass and asparagus

    I made a curried parsnip and apple soup yesterday for work this week - finished it off with the blender and then added a splash of double cream as a wee luxury at the end.

    I love them roasted, especially with a little bit of honey drizzled over them along with the oil - very tasty!

    PS - I'm in Scotland too!

    Try this variation on carrot cake - (somewhere I also found a recipe for chocolate and parsnip loaf which was lovely, will try and find again!)

  • I bought lots of parsnips (Morrisons deal a couple of weeks ago) and I need to use them up, can anyone give me some ideas of what to do with them (diet options if poss as we are all dieting for our hols)

    We cut them into the sizes that we will use (Roasting or Boiling) and then freeze them until needed.
    I used to be indecisive but now I am not sure.
