I have been given a bag of parsnips, about a dozen or so, any ideas folks apart from roasted ones. I must admit I haven't a great deal of room left in my freezer

i like boiling my spare parsnips with potatos and mashing them together, then using the my to top a shephards pie more hidden veg my dd doesnt know about0

My favourite soup is parsnip
Peel and chop 3/4 parsnips, 1 potato and 1 onion into 1" pieces
Put in a saucepan with a little boiling water (50ml or so)
Cover with a butter wrapper - if you don't have one put a little butter in with the veg and cover with a layer of tin foil (on top of the veg)
Cover with the saucepan lid and cook over a med heat for 20 mins - you may need to check if a little more water is needed.
Remove butter wrapper and mash with a potato masher or blend (I like to do this as it gives what I call a rustic taste ha ha - usually its easier than getting the blender out)
Add generous pepper and some salt to taste
Add 1 pint of chicken stock, and boil gently for 5 mins, turn of the heat but keep on the cooker and add in 1/3 pt milk.

I love parsnip soup, too :j We make roasted roots - chop parsnips, sweded, turnips, parsnips, potatoes into even pieces. Drizzle with garlic, olive oil, fresh rosemary, and season. Bake until soft.
I'll add this to the existing parsnip thread to keep ideas together

I have got a bag of parsnips (they were 39p in aldis so I had to get them!). Problem is I have never seen a parsnip before in my life and don't know what to do with them. My neighbour who usually knows things, says they are "english veg" not often eaten here, and she has never had them either...Help please !0

I'm in Scotland too and we eat them nearly every week when they're in season. We had them tonight par boiled and roasted in olive oil and on Christmas dat we'll have them boiled and mased with carrots. Curried parsnip soup is one of our favourites too.0

Cut 'em into chunks and roast 'em, mash 'em generally treat them as any other root veg.
