Simmer in a little water until soft, then drain and mash with cream and seasonings. Yum.0

Peel and cut into even sized chunks put in a pan and just cover with water. Add a knob of butter or marg, a teaspoonful of sugar and the juice of a sevill orange. Simmer with the lid on the pan for 10 minutes then with the lid off until the liquid is reduced to a coupe of spoonfuls of sticky sauce.
If you can't get any Sevilles at the moment then boil the parsnips as usual an when the are cooked heat a spoonful of marmalade jelly with a bit of butter/marg and a spoonful of water and pour the sauce over the parsnips. Yummy.
Also, make parsnip chips in the oven or fryer and serve them as a snack dunked in marmalade.
Mashed parsnips taste great with a finely grated lemon peel added, or a very little finely chopped crystelized ginger.
I freeze parsnips cooked and mashed or raw, but if you want to do it properly with blanching and so on then there are very detailed instructions here, just scroll towards the bottom of the page:

Chunchy- topped parsnip gratin
Rachel allens recipe for Crunchy-topped parsnip gratin is lush.
The sweetness of the parsnip really comes through.
It's nice not to have a parsnip dish where they're roasted in oil.

Carrot and parsnip mash
I keep parsnips for months in the bottom of the fridge, rather than freeze. I've only ever had to trim a little off them, never had to throw any out due to rotting.I believe in the freedom of spinach and the right to arm bears.

Luckily, parsnips are one veg that positively love being frozen. Peel, chop and freeze and then you can use them in any recipe - I usually chop half for soups [smaller cubes] and half for roasties [leave them longer].
Although I have yet to pull mine, they are still in the ground as i'm still working through all the squashes and courgettes I've still got to use from the 'summer' season.If you haven't got it - please don't flaunt it. TIA.0 -

Not normally keen on parsnips but once I had a parsnip and chestnut crumble which was very nice. Might be a good dish to have at Christmas0
