    I normally roast them with some honey and grain mustard, but I really love Delia's parmesan parsnips, which freeze really well.
  • I just peel and halve mine or chop for soups or mashing, then I just get a bag out when needed.
    We like parsnip and carrot mash on top of cottage pie, makes a lovely change from potatoes.
    Parsnip, apple and bacon soup is a favourite with all of us as are Parsnip and Cheese pasties

  • I got quit a few hen they where reduced in tesco and all I I'd was peel and chop them lengthways, i didn't blanche just bagged and frozen them, every Sunday I take out ow many I need and roast as usual.
    I've had them for four weeks and they taste fine :)

  • No one in my house likes parsnips apart from me;). What I do apart from the usual adding them to a roast is boil them with potatoes, carrots, leeks and mash them all together. Make them into patties, fry them off and then freeze. We have them with sausages and beans.

    you have reminded me - sweet potato, carrot and parsnip curry is very nice and quite cheap!

    though i use 1 sachet of creamed coconut rather than getting a tin which the remaining milk would go to waste.

    Love the sound of parsnip curry, can someone share their recipe?

    Also, I notice there is a recipe on the Grocery Challenge board for Curried PArnsip soup but it uses a jar of curry sauce... does anyone have a recipe that doesnt use a jar of sauce?

    I bought a massive bag of parsnips reduced to 17p as it was cheaper than buying just a couple to have with our roast. I don't like curried parsnip soup, so any ideas what to do with the rest of them?
