  • Parsnip crisps are yummy, all you do is shave your parsnips with your peeler and deep fry, though I think they can be baked but I'm not sure, and then drain and sprinkle with salt they are yummy.

    Some time ago, JackieO posted a rather wonderful recipe for parsnip & apple soup. I know she won't mind me passing it along.:o

    JackieO's Parnsip and Apple Soup


    2 large bramley cooking apples (I have used eating apples when then have started to go a bit wrinkly )
    4-5 parsnips
    2 veg stock cubes

    Crumble up stock cubes to a powder add two-to-three litres of water .
    Peel and chop to oxo-sized cubes the parsnips, and throw them in the pan.
    Cook to a simmer until just starting to soften.
    Peel and chop apples and chuck them in on top, cook until all is soft and you can stick a knife through them.
    Whizz up in a food mixer or blender and portion up.
    Its beautiful and easy peasy to make
    I sometimes add a teaspoon of ground cinnamon or nutmeg to spice it up a bit .

    Thanks for your ideas. I have found a recipe for parsnip fritters so I might try that.

    Not at all, I prefer to make this soup when I have some parsnips ,especially if they are a bit wrinkly (like me :):) )
    I adore soup and made 3 litres this morning from a kilo of broken carrots that I got from the local g'grocers as they find that folk won't buy them if they have broken.I don't mind as they only cost me 35p,along with some ground coriander and a chopped up onion I have enough soup for lunches for this coming week .I worked it out that I have roughly the equivelent of 7 tins of soup for about 50p including the stock cubes :):):) a real bargain :D I envy you your bargain I too would have snapped them up
  • I use a variant of the soup recipe that came with our veggie box a couple of weeks ago. The ratio is one leek to two parsnips and one apple. Saute the leek, add diced parsnip and apple and cook for a couple of minutes. Add half a litre of veggie stock plus herbs to your taste, bring to the boil, and simmer for 15-20 minutes. I normally puree mine with a stick blender. Feeds one generously for around 200 calories, or two smaller meals with extras (I think a little cheese toastie would be gorgeous on top).
