            you could peel and blanch them, then freeze and you would have them ready to use as mashed or roast.
 I'm not sure how well the soup would work - I suppose it would depend on how much milk/cream you'd use.
 But never fear.........somone here will know the answer and be able to help you out 0 0

            my trusty "will it freeze?" book says:-
 choose young parsnips, scrub and trim them, peel thinly and cut into narrow strips or dice. Blanch for 2 mins, cool,drain, spread on trays and open-freeze. When hard, pack required amounts into polythene bags and freeze.
 recommended freezer life 1 year
 to use - cook from frozen in boiling water for about 10 mins.
 personally I'ld boil the whole lot up, mash them, mix them up with a big handful of grated cheese, put in an ovenproof dish, put more cheese on top and cook in oven until cheese is all melted and slightly crispy on top - YUMMY!!!0

            I boil and mash them with a bit of nutmeg and butter, then I make little fishcake shaped things, dip in flour and shallow fry with just a tiny drop of oil. These freeze very well, I spray them with oil and put them in the oven and cook from frozen.0

 I've now prepped, steamed frozen the parsnip mountain. Will be so handy to have them ready for roasting.
 and all the suggestions sounds so tasty, reckon I'll be bulk-buying pasnips again, on purpose next time !:)

 These sound yum. Am not sure I'm reading this right - do you cook them and then freeze them and then heat them in the oven at a later date? or freeze them without frying them if your not eating now? I bet these go great with loads of things. Am making myself hungry.0

            I usually cook them gently even if I'm freezing them, they went a bit mushy when I froze them uncooked. I only spray with a tiny drop of oil just to stop them sticking to the tin.0

             Very pleased with myself - just got £8 worth of parsnips for £1.40.             parsnip & apple soup is a favourite in our house, as well as parsnip mash. It also goes into casseroles as well as good old traditional roast parsnips with a sunday dinner.0
