    I bought gammon (£2.99 a kg) in Lidl's last week and made up my ham and lentil soup from the stock after I'd boiled it. I can't find any (reasonably priced) red lentils at the moment so I soaked some soup/broth mix pulses instead. The carrots/onion/bayleaf/peppercorns were in the stock from boiling so I just removed the bay leaf, added more carrots, onions and some diced potato, pepper, the soaked pulses and boiled it all up. It tasted delicious (not that I've eaten any!) so that's five lunches (for 2) in the freezer plus the sliced gammon portioned for other meals.
  • I make lentil soup every week for hubby, make a giant pot, the freeze it in portions for his packed lunch. The way I make it is the way my mum used to make it. In a large pot I put

    Water
    3 ham stock cubes or vegetable
    Lentils
    5 or 6 Grated carrots
    Grated Swede
    Chopped Leek
    Handful of Parsley
    Salt and Pepper


    Cook on a very low heat for a few hours

    My favourite lentil soup at the moment is a Turkish one - made with red lentils. It is really easy and tastes great.

    All you do is combine lentils (1 cup), 750 ml stock (home made chicken or beef is best), 1 l water, 1 medium carrot, 1 medium onion and 1 medium potato in a pan. The vegetables should be roughly chopped. Cook until the lentils are soft. While the lentils cook, take half a tablespoon of butter and a dessert spoon full of flour and cook together slowly until golden. Add this mixture to the lentils when they are done, and whizz it all smooth with a stick blender. Check seasoning, simmer for a few more minutes, serve with a drizzle of lemon juice. Serves 6.

    I've been Money Tipped!
    I made this recipe up recently, lovely and spicy and made loads:

    Curried Red Lentil Soup

    1/2 medium peeled and chopped onion
    2 tablespoons oil (used olive oil)
    1 chopped garlic clove
    1 teaspoon finely grated ginger (I used a tsp of lazy ginger from larder)
    1 + 1/2 teaspoons curry powder
    1 teaspoon ground cumin
    1 cup of rinsed red lentils
    1 + 1/4 cups water
    3 cups of stock (I used home made chicken stock but vegetable would be good too)
    2 medium tomatoes, peeled, seeded and chopped (I used some tinned plum ones)
    Fresh lemon juice to taste (jif bottled juice worked)
    seasoning to taste

    Method
    In a large saucepan, cook the onion in the oil stirring until golden brown
    Add the garlic and ginger and cook for 30 seconds, stirring the whole time
    Add the rinsed lentils (I also soaked them for 1 hour) with the measured water and stock
    Bring the liquid to the boil and simmer, covered for 25 minutes - once ready to simmer I transferred all to the slow cooker and left it to it's own devices for the afternoon.
    Stir in the tomatoes and simmer for a couple of minutes.
    Add the lemon juice and seasoning and serve with lovely thick slices of home made bread.
    This makes a lovely thick and spicy soup

    I am on a low salt diet so bacon is a no no :( and adapted this recipe by adding hm (no salt) stock instead of a stock cube.
    Our days are happier when we give people a bit of our heart rather than a piece of our mind.

    bacon and lentil soup

    fry two gloves of chopped garlic; chopped spring onion; two slices of bacon chopped; two potatoes peeled and cubed.

    when brown add about a cup of red lentils, a tin of tomatoes, one knorr chicken stock cube and cover with about 200 mls of water.

    bring to boil, add a teaspoon of chilli powder and some dried basil, simmer until cooked!!

    3 onions diced
    6 grated carrots
    3 potatoes (diced or grated, up to you)
    veg stock cubes
    4 rashers of bacon (for flavour, can chop and leave in if you require)
    Salt & pepper

    This makes a huge pot of soup, lovely and thick and freezes well.
  • I sometimes add butternut squash to my lentil soup along with carrots and onion and it makes a cracking thick soup.

    My VERY simple HM Lentil soup is as follows.

    Fill your saucepan to approx 1/3 with 1 or 2 chopped onion, lots chopped carrots and couple of sweet potatoes and fry for a few mins in oil/butter/both.

    Add one and a half mugs of lentils in large saucepan or more for large pot. I also add a huge squirt of tomato puree.

    Cover to nearly the top with hot ham stock (I use 2 Knorr Stock cubes per saucepanful) (or veg if veggie), add loads black pepper, heaped tsp mixed herbs or 2 depending on size of pan and at least 3 bay leaves.

    Simmer for half hour.

    Blitz with handblender or in whizzer.

    We LOVE lentil soup, had it for dinner last night and I just had some more for lunch - I makes loads at a time, using a whole big bag of carrots and a massive pot :D
