    Homemade chicken stock, red lentils, carrots, cumin, seasalt, black pepper.

  • My lentil soup recipes is "anything goes" :-) Usually boil a handful of lentils in half a litre of water with a stock cube and pepper. Then add anything I have lying around in the fridge. Things I have used up so far: potatoes (cubed), carrots (sliced), bits of cauliflower, cauliflower's green outer leaves (sliced), butternut squash (cubed), bits of bacon, bit of salmon. Anything really. Sometimes I put some curry powder in and serve it with leftover naan bread, other times I put a bay leaf and some soured cream in and serve with toast. If you like it more substantial, put a tablespoon of flour in half a mug of water, whisk until smooth, pour it in and let the soup boil one more time.

    Here's the simplest one - from Turkey - it's an all time favourite.

    1 cup red lentils
    1 carrot
    1 potato
    1 onion
    750 ml stock (beef or chicken or vegetable)
    1 l water

    Roughly chop the veg, then put all ingredients in a pot and cook until the lentils are soft. This takes about 30 mins (10 mins in the pressure cooker).

    While this is cooking, take 1 spoonful of flour and 1 spoonful of butter and cook softly together over a low heat until golden.

    Once the lentil mixture is cooked, add the butter/flour mixture and blend with a stick blender or food processor. Season with salt & pepper.

    Serve with lemon wedges and (optional) a little dried or fresh mint.

    mines a similar recipe, passed on to me by my mum. but no tomato. it has lentils ( i only use red ), potatos, onions, celery, swede, stock, milk , carrots . salt and pepper to taste and nutmeg grated on when served. It is delish. i have a whole freezer draw full. best lentil soup in the world ever.

    Bung it all in - either cook overnight on low or a morning on high

    Can i ask is this a thick soup or a thin one?? I like my soup so that you can stand your spoon up in it and will add more lentils if this one is thin :rotfl:

    i only ever make lentil soup using red lentils. but i've loads of green lentils. would using these instead of red change the taste dramactically ?
