  • Sounds nice - Google brings up quite a few, although a recommendation from here is always better

Delia has a really yummy recipe for Lentil and bacon soup, I'll go see if I can find it online (save me typing it).

  • I had this today!

Sweat off a large chopped onion in a little oil.

Add as much bacon as you have after 5 mins.(I had 4 rashers chopped small)

Add as many carrots as you want chopped small after another 5 mins plus any other odds from the fridge. (I added one stick of celery and one leek, both chopped to a similar small size)

Add a tin of tomatoes and top up with hot water with a veggie stock cube.

Sprinkle a light coating of dried red lentils over the top and stir in. Add bay leaf.

Simmer for at least 20mins. Check for seasoning. Take out the bay leaf.

Whizz up or eat lumpy. You might need to add some more hot water at this stage.

  • I love lentil and bacon soup and often make it, but unfortunately DD's won't touch it!! For about 6 portions I use about four rashers of bacon, an onion, 2 carrots and a stick of celery. I whizz all of these in the food processor until they are "grated" looking and then I fry them all in a tiny little bit of butter and oil in a large pan, until they are starting to soften and go translucent. Then I add a cup of red lentils, and about two and a half pints of stock (I use marigold veg stock), a bay leaf, some white pepper and a pinch of mixed herbs (only a tiny pinch). I cook it for about an hour or so until it is all thick and lovely. I don't blend it because I find that blitzing the stuff first means that it has a nice consistency, but you can if you want to.

  • I do an indiany carrot and lentil soup

Boil a few table spoons of lentils in a pan for about 10 mins, rinse. Separately fry off a chopped onion, add a load of grated carrot, a pint or so of stock, the lentils and then some curry powder and chilli powder. Simmer for about 10 mins. Serve.

Its not very exact as it changes every time i do it. You can vary the liquid to bits content. It is rather yummy!
