    I never soak mine, just bung em in and cook til tender/soft-doesn't take long- never understood why you need to soak em.

    I make a pot of lentil soup every week and my family love it - its evolved over the years and I think its perfect now :)

    It goes something like this... and is plenty enough for 4/5+ adults... oh and it freezes really well !

    FRUGAL'S LENTIL SOUP
    1 onion
    4-8 organic carrots (the only thing I ALWAYs buy organic coz they taste so much better)
    2-4 rashers smoked streaky bacon (I always split a pack and freeze in 2-4 rasher packs)
    approx 250g (half pack) red lentils
    1 ham stock cube plus 1 chicken stock cube
    tomato puree or passata
    boiling water
    3 bay leaves
    1 bouguet garni (or use any mixed herbs)
    a little salt to taste
    this soup can take quite a lot of black pepper

    Fry the bacon til starting to colour then add onion and fry til soft. add carrots and lentils and stir well - then add stock cubes, tomato puree and boiling water, herbs and black pepper.

    Simmer for minimum of half an hour then blend with a knob of butter.

    To be posh, add a swirl of cream when serving ;)

    I don't add any thickener with this soup - I add more carrots than my original recipe called for as I like a thick tasty soup which hasn't been thickened with cornflour or similar.

    I feel really dim, but Frugal, what is a 'ham stock cube' ??? i've only ever noticed beef, chicken and vegetable stock cubes...:o

    Your recipe looks yummy and I'm going to try it sunday night for week day soups next week! thanks!

    That soup sounds lovely frugal - I have lentils in my cupboard and may have to try this recipe out - can you do it in a slowcooker?

    I don't see why not :confused: I am sure it would be perfect for a slow cooker - I like to cook mine for a long time as I think the flavour improves.

    Ooooooooooooooooh I also never peel my carrots so more vitamins & fibre and less waste ;)

    Once they are blended up you would never know anyway !

    damn - went to the supermarket tonight - remembered everything but the bacon. Will have to get at the weekend to try frugals lovely sounding soup
