I do spiced carrot and lentil too, but I avoid grating by boiling the carrots with a potato (for a bit of body) then use a potato masher so it doesn't go completely smooth. You can add milk as well.

Red lentils also go well with tinned toms in a soup. Onion, of course, then whatever seasoning you fancy. Last time I used up a tired red pepper as well, and added some paprika and Lea and Perrins.

And I've used lentils boiled to a pulp as the main liquid, adding onion, Indian spices and a tin of chick peas.

I can never make the same soup twice, cos I'm not at all careful about quantities.

  • Hoping you can all help ...

Saw a recipe within the last two weeks for red lentil soup, so went out and bought a bigger back of lentils and some cumin as that was the only ingredients I remembered when at the shops.

Unfortunately I now cannot find the paper/magazine that the recipe was in !!!!

    Can anyone help

(ps also bought a butternut squash the other day and would like to try and make soup with that ... off work for a long weekend so plenty time to experiment)

  • I made some lentil and bacon soup yesterday:

12oz red lentils (soaked for 30 mins)
    2 onions chopped
    3 carrots diced
3 celery sticks (I left these out as I didn't have any)
    bay leaf
    1 1/2 litres water
    2 garlic cloves
4 rashers smoked bacon cut up small.
Heat up some oil and fry the bacon, add the veg and soften for 5-10 mins add rest of ingredients bring to the boil and simmer 30 mins. Zuzz with hand blender.
  • Usually make soup with red lentils and a smoked ham hock with carrot, turnip and potatoes, but this soup only had about 3 ingredients in it.
    No Signature Required ......
  • I make it lots of different ways. Just pick and mix but obviously don`t duplicate the stock

    lentils
    onion
    carrot
    tinned tomato
    curry spice
    butternut squash or acorn squash
    sweet potato
    gammon stock cube
    marigold stock

I always whizz the soup and it`s always lovely with fresh hm wholemeal bread rolls
  • Ooh like the sound of that. If you can remember which magazine it was the recipe might be on the website, all the recipes I have are quite long. Sorry.

Think I'd substitute stock for the tomatoes but apart from that it sounds ok
