No it wasn't rare memelalou, but it wasn't braised either, the only liquid was the juice from the steak and the onion.

I have never done it like this either but I bet my OH has, I will ask him when he gets in from work. I would guess at GM 6 or so for 20 mins, just a guess though :o

This looks very similar to how your mum did them, you could leave out the mushrooms and just use steak and onions:

That does look very similar, thanks anguk. Only she never used any flavourings or liquid, still looks the same process though and her steaks were alway tender and really tasty.

Will try that out I think.

I remember my Mum years ago cooking sirloin steaks covered in thick onion slices, in tinfoil in the oven.

Are you sure they were sirloin steaks? Sounds more like braising steak or stewing steak.

Strikes me as an awful waste for a good succulent sirloin?

Nope it was definitely sirloin. We used to badger her to make them more often than she did as they tasted so good and just kinda melted in your mouth. In fact I didn't know there was any other way to cook them until I'd left home. :)

  • I agree with Hintza: this doesn't sound like the right way of treating what should be a tender cut of meat.

If you're not confident that your Mr T's steak is as tender as it should be I'd be giving it a right good belting before I cooked it

I;'ve merged this with the main steak thread :)

I do them in tinfoil parcels with a big whack of butter - garlic butter and onions would be nice too ! Check it after 10 mins according to how you like it cooked. Very soft ,tender, yes it seems wrong but it's delicious :D

I know Ive replied before but

    hot pan
meat season well with salt (and pepper if you like)
    a little oil
if you are unsure of the amount then brush a little on the steak but its just a small amount
put the steak in the pan and leave it!
dont move it,touch it or anything
allow that side to brown well
    as a rough guide
if you are going for medium then wait till the steak colours about half way up on the sides before turning.
at the end of the cooking stage then remove from the heat and add a generous knob of butter
allow that to melt and foam up
spoon this over the steak as it foams
remove the steak from the pan and allow it to rest for at least 5 minutes somewhere warm(on a cooling rack is better than a flat surface)
cover it with tinfoil if its not that warm

if you want to do a baked version then ensure you seal and brown the steak as above but obviously rmove from the pan once browned
