    Hi everyone, after reading some of your posts (not had a chance to read them all yet!) about slow cookers I've taken the plunge and got a morphy richards 6.5l one from freecycle!! I've just found the instruction manual online and it says when you cook a joint of meat, you must cover it with water. This seems excessive -what do you think??

    Yes, it's excessive (unless you want more of a pot-roast effect). You don't need much water at all as most joints give off juices very rapidly. 1 tablespoon wine or water will be plenty just to get it started.

    If you want a less 'moist' roast then it's a good idea to scrunch up balls of kitchen foil, put these in the base of the pot and balance the joint on top, so it doesn't sit in the cooking liquid.

    i have loaded up my slow cooker with left over roast beef from tea, some carrots and onions. if i go out to work at 8am and not come back until 6 will it be ok on a low setting all day? or will it all turn to mush?

    Depends how 'slow' your slow cooker is, but in mine that should be fine I would think.
    I've got a book of slow cooker recipes which recommends 7-10 hours for beef casserole-type food so it sounds ok to me!
  • Because the beef is already cooked, I would do the veg etc inthe slow cooker all day then just add the beef to heat through when you get in - just an insurancce policy against the beef turning to mush. Beef from raw wouldn't be a problem but being cooked already you could risk it turning to mush.

    It makes sense to cook the veg rather than put the meat in to me as well. Didn't read the original post carefully enough to see that the beef was already cooked! My answer assumed it was from raw!
  • ....tell you what, though - even if it does turn to mush, doesn't that sound like a cracking winter soup idea? :)
