so, I don't know whether it's down to me not being used to my new fan oven & I've overcooked it, or whether I need to use the fattier lamb :think:

mine was gorgeous if slightly greasy, now since its only me eating it im debating freezing the remainder for next saturday night, i didnt leave mine to rest with tinfoil after it was cooked as i think it would have absorbed more fat which i didnt want it to do. but it was tasty and juicy and lovely on a bit of nan bread with garlic sauce :money:0 -

ours was lovely too, I just thought it could have been a bit juicier, but then I'm getting to grips with a new oven too, so I think a bit of experimentation is in order
I bought the Value one because lamb's pretty greasy anyway & it had the lowest fat content, I think I'll try the higher fat mince next time, I'll definitely be making it again
EDIT ... I hope to have time to make my own Pitas next time, I've made Claudia Roden's in the past & they were a world away from the shop-bought ones0 -
I was thinking the exact same thing... I got two packs of pork mince (they were on offer!) for the sausage thingies ... have used one of them and made 8 out of it!!!
I was wondering if it would be ok to freeze either the full pack of mince or freeze the sausage patties if I made them up... I seem to remember reading earlier on in the thread that frozen mince is a no go... or is that just the stuff you buy already frozen from the supermarket?
I bought a 500g of pork mince and froze it in 2 halves. I defrosted one half overnight in the fridge and made the patties in the morning. I got 4 patties out of it but OH said the egg/sausage muffins were too meaty and the McD ones taste more eggy (but he did like them a lot) Next time when I defrost the other 250g I'll get 5 patties from it as the recipe says 52g minced pork (I think) per muffin.
Point to my story is I used frozen pork mince that I defrosted and didn't make anyone ill. Next time I buy pork mince I'll make the patties first then freeze them between layers on grease paper, then defrost them over night when I'm going to need them.

I bought 2 packs of pork mince from Sainsburys which made 17 muffin style burgers which I cooked then froze.
That way I have a quick lunch as I only need to cook the eggs.0 -
I think it's wen you buy frozen mince it's always the free flow stuff - which is ground and trated differently to fresh mince so has a diff texture.
Bought fresh mince that you freeze urself will be just fine and will not make anyone ill or get a bad end result.0 -
I've always do this with homemade burgers and now I do it with the sausage patties, as you say makes it so much easier. HTH
p.s I use my burger press for both.
I got 2 x 500g packs of pork mince for £5 from Tesco which is roughly 36oz in total, each sausage pattie is 2oz according to the recipe so I divided the two packs up into 18 burgers. I had quite a good production line going in the kitchen!Dum Spiro Spero0 -

After reading all the wonderful reviews & drooling over the photos, I went ahead & ordered the book.
However, the estimated delivery date is 15th-17th October. I usually do my weekly shop on Tuesdays, so I'm wondering if somebody would be kind enough to PM me the doner kebab recipe please. I've already added lamb mince to my shopping list, but I don't know what else to buy
